Yummy! This recipe is beautiful in it's simplicity and so versatile! I brought this as a side dish to Easter dinner and it was a hit. I made it the night before in a 9" stoneware, (as other reviewers suggested it needed just over an hour to bake) cooled to room temp, covered with foil and refridgerated overnight, then reheated in the oven the next day just before serving. Tasted great!
I think this will be my new potluck staple, as it's so easy to make, and everyone likes it.
I'll also try it as a simple weeknight main dish with chopped onion, cheese and ham. So happy to have found this recipe!!!!!
