Orzo with Parmesan and Basil

As written, I was disappointed with the recipe. First, it does not make enought for 4 servings. I had to rush to make a second batch to have enough for 4. Second it took longer than 20 minutes to cook, to make sure the orzo was not hard. I ended up doubling the butter, orzo, broth and salt and pepper but not doubling the cheese and basil. It tasted good but I did not like that i trusted that the recipe as written made 4 servings.

Slow-Cooker Chicken Tortilla Soup

Excellent, even better the next day. I added 2 cans of chili beans (did not drain), 1 cup of salsa and a 16oz bag of frozen corn. I doubled the cumin and chili powder. I added 2 cans of chicken broth and no water. I thought the 1 pound of chicken breasts was enough and it works out great to just put the chicken into the slow cooker raw and let it cook that way, then remove, shred and return to the cooker.

Microwave Peanut Brittle

Fantastic and so easy to make! I followed the directions exactly, except I covered my cookie sheet with foil and lightly greased it. Also, do not over stir the baking soda. Stir it in quickly and pour because it starts to harden fast. Great for gifts!

Blueberry Buckle

Very Good. I followed the advice of the others and used only 1 1/2 cups of flour. I used 2 TBSP shortening and 2 TBSP butter. I only used a sprinkle of cinnamon and I'm glad I did because I think 1 tsp of cinnamon would have been overpowering. I added about 1/8 tsp of vanilla. I had to cook this 45 minutes for the topping to brown.

Easy Chocolate Chip Cookies

Very good. These are easy and quick to make. The batter was a little dry so I added about 1 tbsp of milk. These do not spread very much, the cookies came out less than 2 inches in diameter. These cookies get hard within a few hours. They do not have that "cake mix" taste which is great.

Golden Pork Chops

Very good, although I made a few changes: I browned the pork chops in a pan on the stove then placed in baking pan. Mixed two cans of soup, 1/2 sliced onion, salt and pepper. Poured over chops, cover with foil and bake as directed. I use 2 cans of soup for more sauce to put over noodles or potatoes.

It's Chili by George!!

Very good. Followed the recipe exactly as written. I know if seems weird to add the Tomato Juice, but it really does work and produces a great flavor. I sauteed the meat first then added everything to the crock pot.

Insanely Easy Vegetarian Chili

Wonderful. I put everything in a crock pot and cooked on low for 6 hours. I added one chopped zucchini and toward the end I added the corn. I used light red kidney beans. Everyone loved it and wanted the recipe. I highly recommend this recipe.

Awesome and Easy Creamy Corn Casserole

I gave this 5 stars with the changes that I made to the recipe: I used 2 boxes of the Jiffy cornbread mix and added 1/4 cup of sugar. I did not add the can of whole kernel corn. I added the other ingredients as noted in the recipe. The result is more of a corn "bread" that can be sliced and served. The 1/4 c sugar does not make it too sweet.
