Curried Coconut Chicken

My first foray into making curried chicken, but it won't be my last. Hubby & I really enjoyed it. The only mods. I made were using a bit more curry powder...I was using a mild one, so I just finished off the jar...about 2 1/2 Tbls. I added a few dashes of crushed red pepper flakes to bump up the heat, and added some frozen peas at the end, like one of my Indian friends would. I served it over Thai Coconut Rice (http://www.cookingforseven.com/2009/04/thai-coconut-rice/). Can't wait to make it again.

Pecan Pumpkin Biscuits

Wonderful! I used whipping cream, because I didn't have any half and half, but that just made them more tender. A perfect, basic biscuit recipe that Connie adapted beautifully. Easily customizable for individual tastes, i.e. less/more sugar, less/more spices, different nuts. **For those who find an off taste from the amount of baking powder, (4 tsp. is the usual amount for biscuits made with 2 c. of flour, however), be sure to buy aluminum-free baking powder...it's usually the aluminum that one finds off-putting.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

I used freshly purchased eggs and they peeled beautifully, were perfectly cooked, and had not a trace of color around the perfectly centered yolks. I didn't take my eggs out of the refrigerator until I placed the pan on the stove, so one of mine cracked as I lowered it into the boiling water. (You couldn't tell which one it was after they were cooked.) Next time, I'll allow them to sit at room temperature a bit longer. Thank you, Ken!

Rice Cereal Energy Bars

Although I dislike when people alter a recipe and rate it based on that, I'm about to join the throngs...I omitted the sugar and used honey for half of the corn syrup. These are exactly the texture that I've been looking for in a chewy granola bar, but until now, hadn't found. This recipe is going to be so versatile and customizable. For those who experienced problems with them holding together, perhaps I can offer a suggestion...It took about 8 min. in my microwave for the peanut butter mixture to come to a good boil, stirring every min. to avoid scorching. After I stirred it into the cereal and fruit, I used my hands to knead it all together in the bowl, then dumped it into the pan. You must really press down firmly to get it to hold together. (You should hear some crunching of the cereal.) I used my bench scraper to score it, then cooled it completely. These held together better than any others I have made. Thanks, Janowa!

Buffalo Chicken Dip

Absolutely wonderful! Took it to a New Year's Eve gathering, and it was a hit with all ages. (I did substitute shredded deli chicken for the canned.) Will definitely be making this one again.

Pecan Sandies

These cookies are delicious! I've never cared for the store-bought variety, but my husband likes them, so I thought I'd give this recipe a try. Neither one of us could stay out of them! I did substitute butter for the margarine. Although I chilled the dough as some reviewers suggested, the dough didn't stiffen as one would expect. No matter, the balls didn't spread as much as I feared they might. These were to be frozen and placed on my Christmas trays, but I'm not sure they'll last that long!

Pretzel Turtles

I have made these several times, preferring the "snaps" pretzel shape. I use non-stick aluminum foil on a jelly roll pan and fill it up with as many pretzels and Rolos as will fit.

White Chili I

This was the best white chili I've eaten. The only adjustment I made was doubling the green chiles, since we like more heat, and simmering it longer for a "tighter" chili. Great balance of flavors and spices. Pepper jack cheese added an additional kick.
