Cranberry Applesauce Muffins

Easy and good. I used dried cranberries since I always have them in my pantry but otherwise no subs. This is 6 point on the Weight Watchers Plus program but you can omit the nuts and drop it to 5. Love them!

Slow Cooker Chicken Taco Soup

Made this exactly as the recipe is written. I used Corona beer and doubled it to serve it to my son and his college friends. I now have an empty crockpot (6 qt). Big thumbs up all around. Excellent, tasty, easy to make and economical. We will definitely add this to our rotation.

Mother's Applesauce Muffins

My family really loves muffins and they absolutely raved about this one. I followed the recipe as is except I did omit the brown sugar on top and we didn't miss it. These make a good breakfast or snack for my busy college son who has Crohn's disease. And my husband gave it the ultimate compliment..."This tastes just life something we'd get in Gatlinburg, it's that good!" Thanks for the recipe!

Swedish Meatballs I

Everyone really enjoyed this recipe so I had to give it 5 stars. On my end, not only did I enjoy the flavor of it, it is a supereasy recipe to make. A bonus for me is I successfully substituted ground turkey for the beef and onion powder for the minced onion and this worked great for my son who has Crohn's disease. I will note that this is one of thoses dishes that tasted even better the second day. Thanks!

David's Yellow Cake

Excellent cake! Very moist with a tender crumb even though I used all purpose flour and 4 whole eggs rather than 8 yolks. My husband and I have been eating it unfrosted for breakfast the last couple of mornings and both of us have enjoyed it very much with our coffee. I'm not sure what went wrong for some of the others unless they got in a hurry and didn't cream the butter and sugar properly or add the eggs individually and beat well after each. Some folks don't understand how necessary that is. (It's all about chemistry!) Anyway, we love this cake!

Layered Chicken and Black Bean Enchilada Casserole

This was absolutely delicious! I omittied the cilantro (didn't have and my family doesn't care for it) but made no other changes. I've made it twice and both times it was gobbled up. My college son is learning to cook and definitely wants to learn to make this casserole. Definitely a keeper!

Asparagus with Pecans and Parm

I prepared this for the first time following Carrie's instructions (sounded much easier the instructions in the recipe)and served it for Easter dinner. Everyone raved about it and I absolutely loved it. I like to play with recipes but this one is wonderful as is. Needed no tweaking although I used roasted minced garlic from jar instead of powder (didn't have the powder). Absolutely delicious. This will definitely become a favorite side dish for family dinners.

Best Buckwheat Pancakes

These are really good. My whole family loved them. Best if you let the mix sit for a bit to make lighter, fluffier pancakes.

Carrie's Bruschetta Appetizer

Excellent and easy. I used Italian bread sliced 1 inch thick and added about 4 oz chopped mushrooms. Definitely a 'Do Again' with me and my family.
