Buttermilk Mango-Berry Crumb Cake

I wish I could say I loved this but it was just wrong for me in so many ways. I found out I hate baked mango- the taste texture and color were all unappetizing. As others have mentioned the cake around the fruit was gummy as well. I also did not care for the grit of raspberry seeds in the cake. The cake was fairly bland and too fluffy- every piece served fell to the side. I prefer a coffee cake with more "body" to it. And lastly- I really missed the traditional buttery streusel. This was tasteless and the dry sand texture was not what I want in a crumb cake. I would try it with different fruit, some more vanilla or rum extract and a traditional crumb topping but then I guess it would be a whole different recipe. No one cared for this.

Raw Vegan Brownies

Very good. I used dates and 1/2 cup dark cocoa. Do not add water ! Just keep processing till the nuts have time to become nut butter.

Cake Balls

I really, really, really disliked these. Horrible texture. Difficult to work with. That slight "off taste" you get with boxed cake mixes is condensed down to an almost chemical taste. Unpalatable.

Manhattan Honeymoon

Honey and whiskey should always go together like this. Really delicious.( I used about 2 tablespoons of honey because I was feeling sweet.) There is an almost smokey undertaste that I can't explain.This tastes more complex than the ingredients would lead you to believe. Who would think that adding 2 simple ingredients to a classic recipe would make such an impression? Very pretty name, too.

Rhubarb Crumb Coffee Cake

This is excellent coffee cake. Not too sweet. Wonderful textures - the soft rhubarb, dense moist cake and a great streusel ( I like a streusel that has many dimensions-buttery, small and large crunchy bits, some grainy, sugary bits and some sunken, melty, caramelly spots.) I like a coffee cake that can stand up to coffee and that can be picked up and eaten like a danish or donut. This cake serves up beautifully.

Valencia Orange Cake with Chocolate

Sorry, but this was terrible.Although the recipe doesn't explain, I assumed the crumbs were meant to be pressed into the pan. I did not press them up the side. The crust was way too greasy. The crust could have been much improved by baking it. But the filling was worse. No where near sweet enough or orange enough or anything enough. In fact it tasted just like cream cheese. It was definitely not sliceable -the crust fell apart and the filling was goo. I scraped out the filling and oranges (I threw out the crust) and added eggs, cream, vanilla, Grand Marnier, and orange peel and baked up a very tasty cheesecake.

Refried Beans Without the Refry

This seems like just a quick and easy way to throw together a nondescript side dish. But these will surprise you. They may become the star of your dinner like they did mine. Of course, refried beans are never pretty, but these have an absolutely beautiful texture. Delicious!
