Baked Taco Chicken

This was very yummy. The little ones really liked it too. I did add a few things. For the dry crust mix I added crushed up crackers (ritz), but only to add little crunch, and a couple diced potatoes too. The potatoes picked up the flavor very well. During the last 15 minutes of baking I put a few scoops of butter, and a drizzle of olive oil in the pan. After I took the chicken out of the oven I sprinkled Mexican style shredded cheese over the entire dish. I served the chicken with taco rice and salsa. It was a hit. Next time I used nacho chips instead of crackers and sever with sour cream.

Easy Cheesy Chicken II

Over all it was pretty tasty. I used ritz crackers along with shredded parm and some garlic salt for the breading. Although I felt like it could have used more seasoning, my husband loved it. Oh, I also sprinkled some cheddar and mozzarella cheese on top once it was done baking. I would make this again, but I won't put this in the dinner rotation very often.

Mexican Pizza I

Like a lot of others, I baked the tortillas rather than frying them. My hubby and mother in law both loved them. Next time Ill use flour tortillas. I don't really like the corn ones. We will be making this again for sure.

Simple Mac and Cheese

I wasn't a huge fan of this Mac N Cheese and neither was our little one. I added in some garlic but it may have been a little too much. This will be on our dinner menu again, but next time I'll make a few adjustments.

Easy Mexican Casserole

Very kid friendly! At home we call it Mexican lasagna. The word casserole doesn't go over very well with the kids. The only thing I did differently was put down an extra layer of taco chips before the cheese, I like the crunch and the kids think it's like eatting nachos. I also didn't use the sour cream when making the layers. We just scooped a spoon full on our plates before eating. Which is great since our oldest hates the stuff.

Cheesy Calzones

I gave these guys a shot, despite the poor reviews. I added garlic salt and italian seasoning to the cheese mix, along with bits of pepperoni. The pizza dough I used came from a can so it wasnt round at all. To fix that I just cut them into 4 squares and just folded them in half over filling. Before placing the calzones in the oven I brushed them with olive oil and more italian seasoning. The first batch was a little too crispy, they def don't need 20 minutes to cook. Over all, they weren't bad at all. My husband ate them up (he is a sucker for anything cheesy).
