Double Chocolate Frozen Fudge Pops

These were delicious! After switching to a real food diet over 3 years ago, this is JUST what we needed to satiate Hubba's "need" for the store bought fudge pops!! We left out the choco chips (though he asked to try them the next time) & I used raw organic sugar. He said they may very well be the best fudge pops he's EVER had. High praise coming from a man that was a processed food "freak." Thank you!

Ten Minute Enchilada Sauce

Love this! The whole family (except the doesn't-like-anything-8-year-old) enjoyed this sauce! The only things I changed was that I let it simmer while I was doing other things, and I added extra garlic. I almost always add extra garlic to everything, though.

Chocolate Cream Cheese Frosting

Hudson's Baked Tilapia with Dill Sauce

My husband is an avid fish-hater. He came to me one day & asked to make fish for dinner for him. I went with tilapia, as it is mild & is steered by the flavours you add. We all love dill & Hubba loves cajun. I make my own mayonnaise, so that was just "icing." HUGE hit, so yummy, will be making this again!

Pork Chops with Apple Curry Sauce

Hubba asked me to make this again. The kids gave it more than 5 stars each (except my little one, but he doesn't like much anyway, LOL). I love curry, anyway. I upped the garlic, and added an extra apple. Will make this again.

The Perfect Cream Cheese Pie Crust

I used this for the French Silk Chocolate Pie from this site. So yummy!!! I was actually able to ROLL this crust with NO problems! I quartered the recipe, because I have always had horrible luck with pie crusts, and I still have to lose 1/4 a cup of flour. This was fantastic, and I'll be using this recipe from now on!! Finally, a pie crust I can do :D

Chicken Flautas

I got a little lazy with this recipe, using the same ingredients, but tweaking the addition of the ingredients. I did make the tortillas from scratch.We mixed the cheese, cumin, chicken, salsa & wrapped them in the tortillas. I sprinkled cheese on top, then baked. We loved it!

High Altitude Deep Dish Brownies

These took a lot longer to bake, even though they were in a larger pan (more surface area & thinner batter). The taste was alright, nothing extra special about "high altitude" brownies.

Homemade Black Bean Veggie Burgers

I made these for a 3-day detox diet I'm doing. I substituted rolled oats instead of the bread crumbs, only because I can't have certain grains. They are delicious. I topped with taco style lentils & rice- even better! The kids like it, too. Saving this one for future, detox or not!

Blueberry Apple Crisp
