Chewy Butter Cake
I have been using this recipe for a long time. I can't remember where I first got it, but here it is. It is so good and everyone always loves it and asks for the recipe. It is VERY sweet so I only make it for company or if taking somewhere. Also, I cut into small squares, instead of bars since it is so sweet. FYI, this will not have the consistency of normal cake. It will be gooey inside and crusted top.

Spinach Tomato Tortellini
This was pretty good. I did not have the tomato with garlic and onion so I sauteed some fresh minced garlic and chopped onion in EVOO ad then added a regular can of diced tomatoes. That and slightly less salt were my only changes. I often try new recipes when the hubby is gone for work and if I like it I'll make it again. I look forward to making this again and for him to try it. We are looking for more meatless recipes to enjoy.

Oatmeal Pancakes II
My new favorite pancake recipe! I loved them. I was a little skeptical at first b/c the batter was much runnier than I'm used to seeing, so the pancake was thinner. But, they tasted amazing! The only modifications I made were I used 1 tbsp oil instead of the 2 and I didn't have buttermilk so I just added a tbsp of vinegar to 2% milk. I always grab the Bisquick for pancakes, but not anymore! I think next time I may try whole wheat flour and use less baking soda as other reviewers mentioned. I may also add fruit and nuts for variety. Great recipe, thanks for sharing!
