Peanut Butter Temptations II
I make these all the time. They are always a big hit. I don't always use the mini muffin pan. Sometimes I just line up the mini paper cups on the cookie sheet & drop the balls into the cups. The paper cups hold it together just fine. The only difference is that mini peanut butter cups do not go all the way down flush, but they do still fit in there pretty snug and they never fall apart. Yum!

Peanut Butter Cup Cookies
I make these almost every year and they are a big hit with the family and with the office. Also try them with the white chocolate peanut butter cups ? very yummy! Most of the time I don't make them in the muffin cups, I use the muffin liners and just line them up on a cookie sheet (you can get tons on there) and drop a ball of dough into each. This works great and I love the presentation for office/family parties. The muffin papers will keep the cookie together so that it doesn't spread out too far. Also to the reviewer who had sticky dough, sometimes too soft butter or too much liquid can cause sticky dough. Usually add flour, 1 tbsp at a time and/or put dough in fridge to firm up a bit. ???? LOVE these cookies ????

Chocolate Eclair Cake
This is the most fabulous dessert ever!!! I only make this for special occasions like reunions. Because there is so much you want to share it with everyone. My family (hubby & 2 teenage boys) love this dessert! Everytime I make it everyone wants the recipe. This dessert usually out does every other dessert at the event!!! I use French Vanilla Pudding instead. Also making the choclate from scatch (just like the recipe) is way better then the frosting in a can, and does not take but 2 minutes. The crackers dont fit exactly into the bottom of the pan, but I cut a few up when I get to the ends and fit them in there perfectly. Oh and this dessert is not a "cake", it is more like a pie. Tastes exactly like an eclair!!! One other thing...I let this set in the frig for at least 24 hours, even 48 hours is ok. The flavors meld together. Yummy!
