Slow Cooker Chicken Taco Soup
This soup was amazing. I used hot Ro-tel (the kind with habaneros), chili beans in hot sauce, Trader Jose's dark beer, and a 1.3 oz bag of TJ's taco seasoning. It was incredible, with just the right amount of spice. My boyfriend ate 4 bowls and proclaimed it the new title-holder of the best dish I've ever made.

Chocolate Chip Banana Bread II
I've made a lot of banana bread, but nothing ever tasted this good. This bread is so good it's sick. I made the mistake of halving the ingredients and just making one loaf. That was not even 24 hours ago and the loaf is almost completely gone. Next time I'll definitely make the two loaves. Other than being an idiot and making only one loaf, I followed the recipe as is, except substituted butter for the shortening, as others suggested. Thank you so much for this amazing recipe!

Poblano Chile Enchiladas a la Gringa
These enchiladas deserve ten stars. My partner of ten years, for whom I've been cooking steadily for ten years, announced these enchiladas to be the best thing I've ever made. They were unbelievably delicious. I added cilantro and cumin to the blender with the poblanos and other ingredients, and added several dried red chilies to crank up the heat. I also put shredded mexi-cheese inside the tortillas with the chicken, poured leftover sauce and cheese over the top and baked at 350 uncovered for 20 minutes. Let me be clear: these enchiladas are perfection. Absolute perfection. Will become a staple in our household.
