Coffee Bonbons

These are the bomb, everybody loves them! Didn't change a thing on the cookie recipe, other than to crush the instant coffee in my hands, as other have suggested. I used a mocha icing recipe from this site instead of the glaze, and they are soooooo good.

Cinnamon-Marshmallow Surprises

Yum! They did explode, so a pan underneath is a must. I used half brown sugar. Make sure you let them cool a bit before eating!

Moist Persimmon Cookie

Made with persimmons from the back yard, these cookies are awesome!! Taste kind of like a ginger snap, very yummy and soft. Might be good iced as well.

Fiesta Fry Pan Dinner

I made this exactly as is the first time, and thought it was kind of bland. I made it again, omitting the corn, added a can of drained kidney beans, and used diced tomatoes instead of stewed. Also used brown (not instant) rice, and monterey jack cheese. Very good, will definitely be a repeat meal!

Cookie Dough for Ice Cream (Eggless)

My kids think this is better than the store bought cookie dough ice cream! I used all brown sugar and milk instead of water as someone suggested. Perfect!

Cake Balls

LoVe this recipe, so fun and easy! Made two batches, one with coconut cake and coconut icing, covered with chocolate almond bark and drizzled with white chocolate. SOOOO good!! The second batch was red velvet with cream cheese, dipped in white chocolate and drizzled with dark chocolate. Definitely freeze the balls before dipping, we used the metal dipper from the Easter Egg kit as someone recommended...worked like a charm! I'll post pictures of the finished product.
