Be prepared to leave the salmon in the oven a little longer than specified, depending on the thickness of the cut. The combination of broiler and oven in this recipe made for a great presentation. I look forward to experimenting with other fresh herbs.

Chocolate Mousse II

Worked very well for me. I used high grade dark chocolate chips. They melted instantly with the addition of the hot water, no need for blender, microwave or double boiler, although I was prepared to use the microwave. Be sure to have the egg whites beaten and ready for the final mixing so that the chocolate doesn't cool and set before you are finished. Makes a very dark, rich mousse, which I love. I added whipped cream on top which helped to soften the intense flavour.

Simple Garlic Shrimp

Be prepared to pull out the shrimp when they are done and finish the sauce separately. Smaller shrimp may cook faster than required to finish off the sauce and it is critical to avoid over cooking the shrimp. Have the ingredients fully prepped, as in measured and combined where appropriate, and not just putting containers out on the counter. Husband calls this one a keeper, 5 stars.

Very good, chicken is moist, mushrooms are very tasty. Update: Still one of Hubby's favourites. I have also used bone-in chicken thighs when I couldn't find breast with the skin still on.

Broiled Tilapia Parmesan

We enjoy the tang of the parmesan on the mild fish. Cooking time can be tricky because fish is quite varied in thickness, I will sometimes overlap the thinner portions of two pieces to get a more consistent thickness. I line my grilling pan with tin foil.

Chef John's Roasted Brussels Sprouts

This worked very well for me. The sprouts were tender without being mushy and the sprout eaters in the family liked the dish. Of course, not everyone likes sprouts, even if they are done to perfection. I have never remembered to garnish with lemon, and I don't think it is required.

Chef John's Perfect Mashed Potatoes

We could probably make an advertisement with this recipe. 'Nothing gets between me and my mashed potatoes.' Keep it simple and let the mashed potato strut its stuff. Very good.

Pineapple Casserole Dessert

My first attempt was a huge success, even though I forgot to drain the crushed pineapple. I haven't tried draining the pineapple in my subsequent attempts. It was very sweet, but my subsequent attempts at the recipe to cut back the sugar were not as good. The dish is too sweet for a side dish in our family. Hubby didn't think the cheddar cheese topping was a good fit, and the cheese may not be necessary for a successful dessert. I have tried using up some whole grain bread that was getting a little stale, and it was good, but we enjoy the results better when I use a fresh heavy white bread. The cinnamon is a good addition.
