Black Beans and Rice

This was good the first time, leftovers were better. I used the leftovers to make stuffed peppers. I cooked the stuffed peppers at 350 degrees for 45 minutes with 1" water in the bottom of the baking dish. Added cheese and cooked for 10 more minutes. Served with more cheese and salsa. YUM!
