Orange Ginger Pork Roast

I had company that was allergic to garlic and onion and wanted to serve something that was special and not bland. I marinated the roast in the ingredients for a couple of hours and then basted it while it was on the barbeque. The flavor was fresh and tangy and just right for a hot summer evening meal on the deck with rice and spinach salad. It went over very well with everyone and we didn't even miss the onion or garlic. I will definitely make this again.

Lemon Ginger Shrimp

I eliminated the onion and garlic (for allergies) and and barbequed these on skewers with chunks of pineapple and served them on their own as appetizers. They were delicious and I wiil definitely serve them again. A ginger and cilantro were nice fresh change from garlic.

Christmas Brunch Casserole

This was a wonderful recipe. Much better than the brunch casserole with bread. My family loved it. I made one without onions and added more mushrooms and peppers and one as directed. Both were delicious. You could certainly adjust the recipe as desired (more mushrooms, onions etc.)

Mediterranean Potato Salad

This salad is wonderful. It's light but filling and the leftovers are great and don't go soggy. I added kalamata olives and used the Kraft Greek w/Feta Cheese Salad Dressing instead of Italian. It's nice to have a change from the creamy potato salad.

Baked Artichoke Dip

This is the best artichoke dip for my taste as some of the ones with peppers are too hot. I do add lots more garlic (6-8 cloves) and vary the cheese variety. I just lay a paper towel on top when it comes out of the oven to soak up the grease. Easy and tasty!!
