Fajita Marinade I

Reviewed: Apr. 22, 2012
I don't recommend leaving this overnight, as the meat can actually start to get a little tough. I always add cilantro and season the meat with fajita seasoning before putting on the grill.

Buttermilk Syrup

Reviewed: Apr. 17, 2012
I never want to eat syrup from a bottle again. I can't believe this has been missing my whole life! I've yet to find a person who doesn't love this recipe. I think it goes best with waffles but it really tastes good on anything. Try it on warm sopapillas!

Smooth Sweet Tea

Reviewed: Aug. 16, 2011
This is the best sweet tea I've ever made at home. You can easily cut down the sugar a bit and not miss it though.

Honey Fruit Salad

Reviewed: Aug. 16, 2011
I LOVE making this for my family. I use whatever fruit I have on hand and the honey glaze is the perfect amount of sweetness. If you are using bananas, don't add them until just before serving or else your "glaze" will end up a cloudy, syruppy mess.

Baklava

Reviewed: Aug. 16, 2011
Everyone who tried this said it was the best baklava they ever tasted. For easy prep, I recommend putting melted butter into a spray bottle and just spritzing on the sheets of filo as you go. It makes the prep much faster and simpler. I also recommend cooking this in stone cookware if you have it. It will make the bottom flaky and cirspy without burning it. Pre-cutting about 3/4 of the way through will also make serving this easier (and prettier). I used a combination of all the nuts I had on hand. Can't wait to make this again!

Sticky Toffee Pudding Cake

Reviewed: Jan. 19, 2011
The caramel/toffee sauce on this cake is amazing! I did cut back the brown sugar to just a little over 1/2 cup and thought it was still quite sweet enough. I also didn't find it necessary to cook to the soft ball stage before adding the milk and vanilla. I simmered for about 6-7 minutes then whisked in the milk and vanilla until smooth and poured over the cake (which I had poked holes in with a skewer). The sauce shouldn't be too thick or it won't seep down into the cake as well. In my opinion the chunks of dates took away from the cake a little but the flavor is still great. Next time I will puree the beats with hot water then return to the pot and bring to a simmer before adding the baking soda. I will definitely be making this cake again as it is very different from any other dessert I make.

Brooke's Best Bombshell Brownies

Reviewed: Dec. 13, 2010
These are by far the best brownies I've ever made. I used the "frosting" from the Best Brownies recipe and it tastes like a thin layer of fudge on top of a very delicious brownie. How can you go wrong? Be VERY careful not to overmix these brownies or else they will come out flat and way too dense.

Black and Blueberry Muffins

Reviewed: Dec. 13, 2010
I recommend adding vanilla and using 1/3 c brown sugar in addition to the white sugar. I made the recipe as is and they came out nice and moist but the flavor was a bit lacking. I will definitely make again though.

Raspberry Chocolate Chip Muffins

Reviewed: Dec. 13, 2010
These came out a bit dry for my liking and I didn't think they were quite sweet enough. Next time I will try adding milk chocolate chips rather than semi-sweet and maybe switch to brown sugar rather than white.

Fried Broccoli

Reviewed: Jul. 22, 2010
My vegetable hating husband said this was the best broccoli he's ever had and even my 5- and 7-year-olds liked it (for broccoli). This might become my new regular way of cooking broccoli. I put in the full amount of red pepper and added a sprinkling of garlic salt. I personally think it tastes better steamed for just a couple of minutes before frying because I prefer less crunch in my broccoli.

Donut Muffins

Reviewed: Jul. 19, 2010
My muffin hating husband loves these! They definitely have the texture of and similar taste to a cake donut hole. I had cinnamon/sugar mix left over but I think making less would have made it difficult to get the muffins fully coated easily. These would get 5 stars but they're so sweet they make my teeth itch a bit. I will be making these again.

Creamy Green Beans Parmesan

Reviewed: Jul. 19, 2010
OH MY GOD! These were the second best green beans I've ever had in my life! (My favorite recipe is sweet green bean bundles from this site but those are covered in sugar and wrapped in bacon so that's sorta cheating) I used a little less than a full pound of green beans so they were a bit saucier than they would have been making them exactly as stated. My husband and I both hate fresh green beans so I've been searching for a recipe that would make them appetizing for us. This is it! I did steam them rather than boiling and cooked them past "barely tender" to suit our tastes. I used 1/8 tsp of nutmeg and found it was the perfect amount. I also used Sargento's Artisan blend Parmesan but I don't know if that makes much difference. I recommend trying this even if you aren't crazy about nutmeg or fresh green beans. I will be making these for company and look forward to trying it on asparagus. Thank you for a great recipe!

Best Brownies

Reviewed: Jul. 19, 2010
I was very disappointed in these brownies. I know that over mixing can ruin brownies so I was careful to only stir until the dry ingredients were just combined. This still turned out a bit too "cakey" for our tastes. I also didn't think that they were sweet enough, although I admit I like my brownies so rich I can only eat a very small square so take that into consideration :) I also had trouble with the whites from the eggs not mixing into the batter well. When they were done there was even a big chunk of egg white cooked right there on top that I had to cut out. I even beat the eggs lightly before adding them. I think I will try another brownie recipe next time but I won't rule out trying these again in the future. Egg whites and cake-like texture aside, these were still OK and I'm sure they will get eaten by someone in the house.

Strawberry Muffins

Reviewed: Jul. 12, 2010
I was a bit skeptical of following other people's advice in adding the extra strawberries since I'm not really a big fan of the strawberry but I chopped them up into pretty small pieces and added an extra 1/2 cup because my kids love them. Wow! I've made them twice now and they are amazing. They've turned out very moist both times and I think chopping the strawberries into smaller pieces makes them look prettier. In my opinion these definitely need the addition of the 1/4 cup brown sugar and 1/2 tsp cinnamon (more if you love cinnamon) . I added the 1/2 tsp vanilla both times just because it seems like it should be in there so I can't really comment on whether or not they lack flavor without it. The sugar/cinnamon mix sprinkled on top is yummy but the muffins are also delicious without. If using the topping make sure to sprinkle on very generously. The first time I didn't put a heavy sprinkling on and could barely taste it so it was kind of a waste. I have tried these in mini muffin tins and regular sized and I think the mini ones turn out a little better. With the addition of the extra strawberries I had a bit too much batter for my 24 mini muffin tin so I filled 3 of those silver muffin liners that you can just put straight in the oven without a muffin tin and they turned out great. I will be making this recipe again and again!

Dog Biscuits II

Reviewed: Jul. 11, 2010
I used 2 jars of beef and vegetable baby food and 1 tsp of beef bouillon paste. I recommend more flour if you go the baby food route. I had to knead in more flour because it was sticking to my counters badly but in just a couple minutes I was able to get it to just the right consistency. Then I cut them out with a halloween cat cookie cutter and they turned out great. I oiled one cookie sheet and not the other and found that the oil wasn't needed at all. The dogs loved these and my cats even ate a piece that was dropped on the counter.

To Die For Blueberry Muffins

Reviewed: Jul. 11, 2010
These are amazing! They turn out perfectly everytime I make them and peole always rave about them. I don't think I can ever eat another muffin made from a mix again. I may try experimenting with the topping a bit as I have had streusel that I liked a bit more than the crumb topping on these. Even so these are still the best blueberry muffins I've ever had.

Cheesy Potatoes I

Reviewed: Jul. 11, 2010
These had a really good flavor but they looked rather unappetizing. The cheese/milk curdled while cooking and I was certain they were going to be garbage. Wrong! They had a wonderful flavor and my husband, who doesn't really care for potatoes, said that they were the best potatoes he's ever had and wants me to make them again. I will gladly make them again for our family but due to it's unappealing appearance I don't think I would ever consider making this for company. As other reviews suggested I cut the amount of butter in half and while it didn't detract from the dish, I still thought that it could have done with less. Next time I will omit it completely or maybe just add 1 Tbsp. I also recommend using a large dish rather than a medium as it was nearly impossible to stir without making a huge mess.

Beef Tips

Reviewed: Jul. 8, 2010
My husband and I really liked this and my picky children even ate it without complaining. I put in the full amount of soy sauce and worcestershire sauce but left out the added salt and it turned out with the perfect amount of salt for my taste. I also had to add a couple tablespoons of flour to thicken the sauce up at the end and I used onion powder rather than a chopped onion. My husband and I both agreed that the flavor was fantastic but the texture of the meat brought it down to a 4 star. Next time I will try cubed sirloin tips isntead of the stew meat.

Arrachera (Skirt Steak Taco Filling)

Reviewed: Jul. 8, 2010
This had a very good flavor and the meat turned out tender. It even tasted better the next day! I am only giving it 4 stars because I felt it needed more spice. Next time I will try mixing a little cayenne with the spices before sprinkling it on.
