Spinach and Potato Frittata

I made this with extra spinach and mini yukon gold potatoes. Also I used six egg whites and three whole eggs instead of six whole eggs. Light and delicious dinner!

Adam's Dirt Cookies

These were okay, but I agree with those that said they were too buttery. I used 3/4 cup of butter, and the cookies came out really salty and a little too greasy for my liking.

Polish Sausage with Red Cabbage

This tasted REALLY GOOD, and my fiancee loved it too, even though he's not crazy about cabbage. A word of warning - my cabbage burned while it simmered for 45 minutes, there wasn't enough oil or liquid to prevent it. I would add some beef broth in addition to the wine next time...

Minty Orzo Lentil and Feta Salad

I modified this recipe quite a bit - substituted parsley for mint (didn't have mint), used dried dill, used half of the oil, and added one cucumber and two tomatoes. I also added the juice of 1/2 lemon as another user suggested. Very flavorful, garlicy, fresh, Greek flavors. We loved it.

Asian Ground Beef and Pepper Saute

This was really yummy. Instead of rice, I served it with lettuce cups and a quick sauce made of equal parts soy sauce, rice vinegar, and chile paste. Spicy, flavorful, and crisp!

Nana's Tuna Casserole Surprise

I made lots of adjustments to this, and I liked it, but I still think it lacks seasoning - pepper at the very least - maybe garlic and paprika would have helped too. I used green onions, no olive oil, fat free soup, rice instead of cereal and canned salmon instead of tuna. Next time I also want to add a vegetable like peas.

Spinach Salad with Curry Vinaigrette

fantastic. I added two hard boiled eggs, one green onion, and plum tomatoes, used only 3 T of oil and turkey bacon. It felt plenty oily for me. I made this a week later for guests and just did the dressing with a spinach and cherry tomato salad. It was wonderful and the guests all had seconds.

Green Chile Frittata

I had to give this only four stars because I altered it so much to make the fat content more reasonable. However, I used egg whites only, non fat cottage cheese, and no cheddar cheese, and it was still very very rich, creamy and delicious. I think this would be too much with the yolks and and fat from cheese, but we loved the light version, mainly because it didn't taste light at all.

Cranberry BBQ Chicken

Yummy! I added a little cayenne and garlic powder to spice it up as others suggested and was really glad I did. The result was a delicious thick, sweet, and spicy barbecue sauce.

Noodles a la Pakistan

I omitted the cream cheese like others suggested, spiced up the meat with onion garlic powder, thyme, and seasoning salt, and it was still a little too bland. I may try this again as a base for future experimentation.
