Easy Mushroom-Goat Cheese Empanadas

These tasted great, but I burned the first batch completely. The cooking time can be reduced by about 10 minutes. Beware!

Pasghetti Pizza

Really good - I will make it again. I think I will use 1/2 package of pasta next time - it didn't turn out as crust-like as I would have liked. I will also try leaving it at 400 for the last ten minutes so the pepperoni get a little crispier.

Octoberfest German Potato Salad

This was wonderful. I ran out of regular vinegar so I used 1/4 cup of balsalmic and then I ran out of sugar, so I used splenda. I also didn't peel the potatoes to increase the fiber content of the dish. Delicious result!

Stir Fried Kale
