I was in search of a recipe to use up these exact ingredients that I had on hand. Wasn't expecting more than to just get by in a crunch but was pleasantly surprised. This was so much better than expected...quick and easy, too!!

Broiled Tilapia Parmesan

I've made this several times and this is absolutely the easiest and best tilapia, or any fish, dish I have ever made. Everyone I make it for wants the recipe. I do line a broiler pan with foil and spray the foil with cooking spray. The only other thing I do differently is to sprinkle the fish with Old Bay Seasoning before putting under the broiler for the first time and then again before topping with the parmesan mix while it is out of the oven. I also make sure that I start with the side of the fish that has the dark vein running through the center facing up starting out then it should end up on the bottom when finished. Low fat mayo makes it even more healthy than it already is without making a big difference. I've found it best to follow the cooking time closely. It's quick. It's tasty. Try it!

Nacho Chip Casserole

As I was making this again tonight I realized that I failed to mention in the review I left a few days ago that I also added chopped yellow onion, onion powder and garlic powder to the ground beef as it was browning. Not sure if this made a difference but it was definitely good this way! Spraying the casserole dish with cooking spray made for easy clean up, too.

Southern Style Beef Stew

This is a very good recipe. Great comfort food. I did flour the meat before browning and it worked well. Used canola oil instead of butter for browning. I also added a can of beef broth and some baby carrots. Served with cornbread. Even better the next day.

Grilled Rock Lobster Tails

Doesn't get much better than this. We had grilled lobster in Mexico and of course Allrecipes was the first place I looked for a recipe and there it was. So quick and easy to make. I've found the best way to cut the tail is to take a butcher or any sturdy knife and lightly hit it a few times with a hammer. I melted some butter with a little minced garlic and lemon added to dip the lobster in and served this with a baked potato and side salad and it was possibly the best meal I've ever made at home!

Marinated Pork Tenderloin

This was an amazing dish! I made a few modifications. Removed most of the fat and then pierced the tenderloin in several places before marinating. Added about a cup of apple cider to the marinade and after reading other reviews that said the cinnamon was overpowering, I substituted it with five spice powder. Doubled the marinade. Will at least triple next time. Reserved the marinade, brought to a boil and then cooked on low for about 20 minutes until it thickened. I sliced the meat into 1/4" slices and served it with the sauce. The sauce made this a hit with everyone. I don't know if I will ever be able to make pork tenderloin any other way.

Creamy Avocado-Ranch Dip

This was easy and so good. I was looking for an avocado ranch dressing and this was the closest I came to one. Great as a dip, but add a little milk or heavy cream and it makes a good dressing, too. Works well poured over salted cherry tomatoes with blue cheese crumbles or with a salad. Since my food processor is not very big, I used a blender and flash blended to the consistency I was looking for. It's even better the next day. I'm sure most of you know but Neufchatel cheese is simply 1/3 less fat cream cheese.

Grilled Swordfish with Rosemary

This recipe was great! This was the first time I've ever cooked or eaten swordfish. The flavor was wonderful and the texture was different from what I expected-a nice surprise. Can't wait to have this again!
