Mini Cheesecakes I

Just made these for a party. I made two batches and I made exactly 100. I'm not a baker and thankfully I don't have to be as this recipe was that easy!Now, I don't know if it's because I have a gas stove, which seems to cook things faster, but mine were done in just under 9 mins. thanks for an easy, great tasting recipe!

Luscious Slush Punch

This recipe was loved by everyone no exceptions! I'll defintely make this again. I froze it in 2 2l containers (with a little leftover) and put the containers in the fridge the night before. They came out perfect. I think next time I'll add a bit less sugar. The end of the punch (once the slush was gone) was too sweet...that sweetness wasn't noticable when it was slushy though. Very convenient to be able to make ahead of time.

Cran-Raspberry Gelatin Mold

Normally, I'm not a big fan of jello but I loved this. I loved the tang of the cranberry and raspberries. People loved this in place of cranberry sauce with turkey. This simple recipe will be used often.

Oven Baked Jambalaya

excellent recipe. I used a shrimp ring and stirred in the shrimp right before serving so they wouldn't be rubbery. This makes tons! It couldn't be easier to put together. Thanks for a great meal!

Beef Wellington

i made this for an anniversary dinner for my parents. Not being much of a cook, even the butcher laughed at me attempting this. I made individual portions. The key to keeping the bottom from getting too soggy is to add a small bit of cold toast that is rounded off with crusts cut off (so as not to tear the pastry. This soaks up any juice keeping the bottom crispy. No one was aware it was there, even after I'd told them. I also seared the meat in a frypan. Wonderful easy recipe that makes anybody look like a real chef!

Hot Mexican Spinach Dip

This is hard for me to rate. Although this was good, it was nothing special. It was actually the first time none of my guests asked for the recipe. If you don't normally eat this type of thing..go for it! otherwise I wouldn't bother.

Italian Sausage Soup with Tortellini

Wonderful soup. Quick and you don't have to wait until the next day for the flavours to meld..you can eat it right away..very full bodied taste. I've made it several times, I like it best with spicy sausage, brown rice, lots of veges and different beans/legumes in it. Thank you!!

Apple Custard Coffee Cake

This recipe reminded me of the bread pudding my mother used to make for some reason. I added a lot more cinnamon and a bit of ginger to each 'layer'. I also added some cranberries as I had some left over. I still found it bland..not what I expected at all. I found it to be quite a heavy dessert without being sweet so perhaps if you're not much of a sweet eater this will appeal to you.
