Sunset Patio Pasta

Reviewed: Oct. 30, 2002
This recipe was a hit! I was asked for the recipe at my book club meeting and again at a BBQ a few weeks later. The key is the grilled veggies - I also used port. mush. and asparagus. The grill basket works great for this. Do not dress the salad until just before you eat - best served at room temp. too.

Chicken Spaghetti

Reviewed: Feb. 18, 2003
great recipe! Saute onion, gr. pepper, celery and garlic first. Also added a can of mushrooms. A 1/2 can of soup made it nice and moist and baked with foil for 25 min. 10 min. w/o foil. Hubby loved this one! Will make again.

Hamburger Pie II

Reviewed: Mar. 8, 2003
I am sorry to say - but this entire went in garbage! I made the recipe exactly as stated - and the 3T of worcestershire was overpowering. Smelled like it at soon as you cut thru the crust - four adults tried it and we ended up having grilled cheese!!!

Stuffed Celery

Reviewed: Sep. 18, 2003
These are great! It is a nice change of pace as an appetizer. I put chopped nuts on top of the celery - I haveeven just served the spread on crackers and skipped the celery when I ran out of time.

Cooking Light magazine's Indian Chicken Curry

Reviewed: Sep. 18, 2003
I used light coconut milk instead of yogurt and sub. about 2 cups chopped carrots for the potatoes. We love it on jasmine rice. A family favorite. It is even better the next day - but it gets hotter.

Spinach and Strawberry Salad

Reviewed: Nov. 24, 2003
This is great for the holidays! I use craisins instead of strawberrys and some fine minced red onion, also some crumbled feta or goat cheese, this bowl is always empty! It does make more dressing than you need, so you have extra for a salad with all the leftovers.

Won Ton Snacks

Reviewed: Jan. 2, 2004
Great change of pace for an appetizer!! I only used 1# of pork - but then added napa cabbage, ginger and pea pods to the veggies. After the liquid cooked off, I added only 1/4c. of the peanut sauce and 1/4c. of oyster sauce and a few splashes of teriyaki as well. Hubby wanted to eat them all himself! Thanks Denise!

Earthquake Cake II

Reviewed: Jan. 18, 2004
YUM! Easy and got rave reviews! I served with some cool whip too. Definately needs to bake 45-55 minutes, not done at all at 30. The coconut and nuts carmelize on the bottom and it's just perfect. I never bake and I will be doing this one again soon!

Slumgullion

Reviewed: Jan. 28, 2004
This is a good family casserole 4 adults liked, and my picky 2 yr old had some! I cooked grd beef with onion and garlic, then added 2 cans mexi-corn and two cans tomato soup. I did add approx. a 1/2 c. of ff sour cream to make it creamy and then put in a covered dish with cheese on top to keep warm for about 30 minutes until dinner.

Strawberry Delight Dessert Pie

Reviewed: Jun. 22, 2004
Everyone enjoyed this - but the presentation left a lot to be desired. I would use less milk for the pudding, as it was a sloppy mess when taken out of the pan. I did double the berries too, and it was the perfect amount of berries. I think I will try it w/o the pudding and just whipped cream next time.

Easy Slow Cooker French Dip

Reviewed: Sep. 26, 2004
Well it just dosent get easier than this! I used a package of dry onion soup mix too and light beer. I did quickly sear the roast on all sides to seal in the juices before I put it in the crockpot. I will make this again.

Spinach Cheese Manicotti

Reviewed: Sep. 26, 2004
This is a great make ahead party recipe. I spice it up with some cooked Italian sausage, and a pinch or two of crused red pepper. I have also sub. fresh basil for the parsley and I use 1T. of minced garlic in the ricotta instead of the powder. I serve it with Italian bread and a tossed salad.

Baked Stuffed Tomatoes

Reviewed: Sep. 29, 2004
This were better than I expected - I was trying to use up some leftover garden tomatoes. I used six small to medium tomatoes and only had enough stuffing for five - so I would be more generous when making the filling. I used Romano cheese and some fresh snipped basil too.

I used 7 apples and 2/3 c. water. I also sprinkled cinnamon and sugar on them. I added about 2/3c. rolled oats and some chopped pecans to the topping. This is fab! I have replaced my old crisp recipe with this, yummy!

My Best Clam Chowder

Reviewed: Oct. 13, 2004
Sorry - you can't taste the clam in the clam chowder. It was like a creamy veggie soup. I even added a little bacon to give it some flavor. I will look for a recipe that uses bottled clam juice to give it clam flavor. We ate it for dinner but not the leftovers.

Tonkatsu - Asian-Style Pork Chop

Reviewed: Oct. 15, 2004
These were just okay. I used chicken. It needs more spice and seasoning. Maybe some ginger or teriyaki. I may try it again with a different approach.
