Incredibly Cheesy Turkey Meatloaf

to save time I put into 9x13 and baked for 45 min at 375 and it was moist and tasty! I only added 2c shredded sharp cheddar and one small diced onion - generous w poultry seasoning...whole family loved it!

Delicious Black Bean Burritos

Kid friendly! I had to leave out the jalapenos unfortuantely (added hot sauce to mine!) but then added a T. of taco seasoning mix and some chicken broth since they were so thick. Fast and healthy! Kids ate them up! served with sour cream and shredded lettuce.

Creamy Chicken Casserole

This was a crowd pleaser and so easy. I added sauteed mushrooms onion celery and carrot and added a can of cr of mush. I used a chicken and garlic rice too. It was a hit! I will make it again.

Old Bay® Shrimp Fest

What fun! We used our outdoor turkey fryer pot - we used the Old Bay shrimp/crab boil seasoning - it comes in small box and it's a bag that just gets tossed in the pot - however it did make the onions and potatoes quite spicy. It is a fun summer meal with no mess!

Prosciutto Wrapped Asparagus

SO GOOD! I too boiled for one minute and then put them in an ice bath. I used light herb cream cheese - I made them in singles for an appetizer. Impressive, tasty and easy - it cant be beat!

Artichoke Bruschetta

This is really good for a fast and impressive appetizer - I added some frozen thawed spinach and diced roma tomato - very pretty. I cheated and used Panetini garlic toasts instead of bread - I had it ready to serve in about 15 minutes.

Santa Fe Soup

This is very fast & easy to make. Be warned, it is rich! I added another can of diced tomatoes to cut it. It really needed the fajita seasoning that I added (2T about) - we topped with fresh cilanto too. I sub. hominy for the corn too.

Pasta Rustica

FABULOUS! I skipped the bacon and added 1.5 lb of cooked Italian sausage. I cut the oil back to 1/4 c and added 1/4 c. butter. I used seasoned diced tomatoes and 1/4 each of green and black olives - oh I also added a pkg of fresh mushrooms at the end. I put everything in a casserole for a get-together a few hours later and reheated in oven with Asiago cheese on top. Be generous with the flat leaf parsley, garlic and crushed red pepper! Got rave reviews! I will make again soon.

Chicken Enchilada Soup III

Fabulous!! I added a can of Rotel and a can of black beans. I also doubled the spices. I used chicken broth instead of water and two cups of enchilada sauce. I topped with fresh cilantro and oven crisped corn tortilla strips. Would be great for a football party!

My Best Clam Chowder

Sorry - you can't taste the clam in the clam chowder. It was like a creamy veggie soup. I even added a little bacon to give it some flavor. I will look for a recipe that uses bottled clam juice to give it clam flavor. We ate it for dinner but not the leftovers.

Easy Apple Crisp

I used 7 apples and 2/3 c. water. I also sprinkled cinnamon and sugar on them. I added about 2/3c. rolled oats and some chopped pecans to the topping. This is fab! I have replaced my old crisp recipe with this, yummy!

Baked Stuffed Tomatoes

This were better than I expected - I was trying to use up some leftover garden tomatoes. I used six small to medium tomatoes and only had enough stuffing for five - so I would be more generous when making the filling. I used Romano cheese and some fresh snipped basil too.

Spinach Cheese Manicotti

This is a great make ahead party recipe. I spice it up with some cooked Italian sausage, and a pinch or two of crused red pepper. I have also sub. fresh basil for the parsley and I use 1T. of minced garlic in the ricotta instead of the powder. I serve it with Italian bread and a tossed salad.
