Breakfast Casserole II

This recipe as written was very boring. Nothing wrong with it but it needs more punch. I did add cheese as others suggested (2 c. sharp cheddar) but it was still too bland for my taste. Also needs salt. I would make again but use another potato variety and some addtl spices to kick it up. But it was easy though.

Blueberry Sour Cream Coffee Cake

Delicious! I made 2 cakes for work since I knew 1 wasn't enough and they loved it. Very easy but it did take longer to bake than the recipe stated. Maybe my oven's slow.

Chocolate Lovers' Favorite Cake

This is the best chocolate cake...almost as dense as a brownie. It taste even better the next day after it's had a chanceto sit and become denser. I made it in a full size tube pan-had plenty of room but it did take an extra 15 mins to bake thru. For the little effort this takes, it's a wonderful dessert. Topped it with the satiny chocolate glaze and it was totally yummy. It's so rich though that unless you have a crowd of people, you'll have leftovers cause you can only eat a little at a time. ***addition...made this a second time and forgot to but 2 c sour cream. only used 1 and it wasw every bit as good as the 1st one. My office LOVED this.

Fresh Southern Peach Cobbler

Delicious! No changes needed. Fresh summer peaches are the best. Family loved it on July 4th and office loved it later in the month. Very easy although blanching/peeling the skins does take a few minutes but ohhh so worth it.

Japanese-Style Deep Fried Chicken

I don't get the rave reviews. This was was not well liked at our july 4th party. Way too much blue cheese for my taste (and I love blue cheese). Will probabaly not make again.

Burrito Pie

This is really good and if you want an extra kick, substitute a can of sliced jalepenos for the green chilis. My kids loved this. I also made it vegetarian by using a bag of meat substitute crumbles for the beef. Also added a can of balck beans cause I love them.

Chocolate Brittle Surprise

I loved thisd recipe as is and have made it many times. I will probably try it with milk chocolate since my kids like that better then semi-sweet that I prefer. No one ever knows it's made from crackers.

Incredibly easy and tasty. My only complaint would be it is VERY sweet. Not sure how you would lessen it but you can't eat as much as you might like to. My kids liked it a lot.

These are totally easy and worht the time. I've made them for years and whether I take them to work or church, eveyone eats them till they're gone. NO changes needed. And chocolate doesn't belong in Irish potatoes.

Coconut Cream Cake I

This cake is definitle moist. I think next time I would also make it with milk instead of water. And maybe cut back some on the coconut milk/sw cond milk combo. My cake turned out more like a trifle than a cake although the flavor was really good. I tinted the coconut pastel colors for Easter so it was really pretty.
