Melt In Your Mouth Blueberry Cake

Reviewed: Sep. 5, 2007
There was nothing wrong with this cake. It just wasn't myfavorite. I used really good berries butit came out fairly boring. Again, nothing wrong, just not very exciting.

Chocolate Trifle

Reviewed: Aug. 16, 2007
This was delicious but I did add the toffee bits, caramel sauce, and nuts. Took it to work and every last bite was gone. I prefer cooked pudding to the instant but when mixed with cool whip, it's hard to tell the difference.

Hamburger Cookies

Reviewed: Jul. 8, 2007
These are just too cute. Have made them several times now because they're so easy and appealing. Even my office loved them. I usually mae the hamburger cake which is much more labor intensive so this is a nice and easy change.

Parmesan Roasted Corn on the Cob

Reviewed: Jul. 8, 2007
idn't care for these at all. Others liked them but we all agreed plain stemaed corn is our favorite. Why mess with a winner?

Apple Fritters I

Reviewed: Jul. 8, 2007
I loved these. Very easy and quick to make. Took them to a church picnic and the adults liked them more than the kids.

Mojito

Reviewed: Jul. 8, 2007
I enjoyed this but everyone else pretty much didn't. I got everyone's leftovers when they couldn't stomach it anymore. Too sour. But I would make it again for me.

Red, White and Blue Ambrosia

Reviewed: Jul. 8, 2007
This is very good but boy it makes a lot. Better have a crowd around for it. I served it at a July 4th barbeque for 17 people and we're still eating it.

Raspberry-Lime Sherbet 'Watermelon'

Reviewed: Jul. 8, 2007
I did think ahead to line the bowl w/plastic so had no trouble getting it out of the bowl. Sherbet does melt quickly so you have to work fast to make this work. Mine was a little souply but after going back int he freezer it was fine. Kids loved it.

Caribbean Sweet Potato Salad

Reviewed: Jul. 8, 2007
Have to admit, this was not my favorite. I really expected it to be better than it was. I did, however, overcook the potatoes so that had something to do with messingup the texture. Will probably try it again as it sounds really good.

Blueberry Zucchini Bread

Reviewed: Jul. 8, 2007
Have a bumper crop of zucchini so this is a great way to use it. Very easy recipe and it's also a good way to get veggies into your kids w/o their knowing. Made it in 2 full size loaf pans and baked for 1hr + 15 mins. Cut the sugar back to 2 cups also as prev suggested. Would be very good w/nuts also.

Red Skinned Potato Salad

Reviewed: Jun. 22, 2007
A very good salad however I found it a little heavy on the bacon. Would cut back by 1/4 next time. Also did not use 2 full cups of mayo-more like 1 1/2-2/3. Went over very well at a church picnic.

These are very good and super easy. I did as previous reviews noted, cut back on the butter to 3/4 cup. I also added chopped nuts as I love them. Very easy for a quick snack.

Clark's Quiche

Reviewed: Mar. 2, 2007
Made this for a work going away breakfast. Since it made 2 pies, I was going to take a piece for dinner but both were conpletely gone before I had a chance. Very good and tasty. I bought pre-cooked bacon to save that step.

Fruit Pizza II

Reviewed: Feb. 21, 2007
I made this for a bake sale at work for "fat tuesday". It was the first and only item that sold out completely. Absolutley delicious. I left out the orange zest only because I didn't have an orange on hand. Did not use marshmallow creme but stuck with cool whip since it's about 12 degrees outside. No chance for it to melt. Have already been told I have to make it again soon.

Creamy Chicken and Wild Rice Soup

Reviewed: Feb. 13, 2007
I made a double batch of this for a soup/salad lunch at church. It was the first and only soup to disappear completely. Absolutely delicious! I did use half cream and half milk as others suggested. I'm making it for dinner again tonight (2 nights later. My kids loved it too.
