Homemade Black Bean Veggie Burgers

I really liked this recipe. TEXTURE: I wish it was a little more meaty in texture like some of the frozen brands. I AM a vegetarian, but I am a new one (one month to be exact), so I still like the texture of meat in my burgers, but the bean-y texture was very good, too--just different. TIME: It took a little longer to make than it was supposed to because I don't have a food processor and my food "chopper" was turning it into liquid (I don't know if that was supposed to happen), so I took it out before it was too late and chopped the rest by hand. Chopping by hand meant more time in the kitchen, and plus the burgers were a bit chunkier than I preferred. They were still very good. I added a tablespoon of Egg Beaters to it to make it stick together. It tasted good, and unfortunately nobody in my home wanted to try it, so I was alone in my enjoyment of these burgers (is that really a bad thing?). I gave this recipe 5 stars because although the texture was not exactly perfect to me, this is a veggie burger and I realize it isn't supposed to taste like meat. Update: I chopped the vegetables in the blender, which was probably a big mistake because it made it basically liquid. Will chop by hand next time because I don't have a real food processor.

Slow Cooker Macaroni and Cheese I

I really like the idea of macaroni and cheese made in the slow cooker. Great idea for the hot summer months--instead of heating up an oven, I can make it this way. I used to avoid making baked mac n cheese from June-September, but not anymore! *CHANGES MADE:I used two and a half cups of 2% fat milk and no condensed milk. I also used one cup of Velveeta that I shredded into the mixture (replacing one cup of the shredded cheddar). I highly recommend using at least one cup of Velveeta if you aren't an anti-Velveeta person. I used Lawry's seasoned salt, and just seasoned to taste (since we aren't on a salt restricted diet). I have a fairly new 5 quart slow cooker, so I cooked it on low for only 3 hours and the macaroni pasta was tender. It came out just as tasty as a baked macaroni and cheese dish! Next time I will buy some slow cooker liners because it was a little baked-on around the top edges.

Strawberry Orange Coconut Smoothie

I really did not like the taste of this one. It had a weird taste and smell. I just don't like the combo of strawberries and oranges. I added a few spoonfuls of strawberry yogurt, and that made it tolerable. Not my cup of tea. But if you like strawberries/oranges, you might like it.

Italian Grilled Cheese Sandwiches

Yummy. I was looking for some different sandwiches other than plain old grilled cheese. I used italian bread instead of white bread. I also just used I Can't Beleive It's Not Butter spray, and then sprinkled the garlic powder and italian seasoning on top. I don't have a broiler drawer, so I just put it on a cookie sheet on the bottom rack, and set the broiler to 'low' and it only took 2-3 minutes on each side.

Garlic Red Potatoes

I loved this recipe! I am a potato lover, epecially of the non-fried variety. It came out pretty good for me. However, after a long day, I was too lazy to mince any garlic, so I used a no-sodium garlic/herb seasoning in place of the minced garlic. I used a little olive oil and then margarine spray in place of the butter. I also did not use lemon juice. I thought the potatoes would be gross, but it came out yummy, even with all the substitutes. I'm sure it will taste twice as good next time I make it with the fresh, listed ingredients. FYI, I used baby red potatoes, and it cooked just fine (gas stove, if that makes a difference) in the time indicated in the recipe.
