Easy Chicken Posole

This was easy and delicious. I hand-shredded a whole rotisserie chicken, and skipped the chicken cooking part. This developed rich delicious flavor in under an hour. I put more chili powder and added it to the onions as they cooked in EVOO. I like spice, so I added some crushed red pepper flakes.

Lemon Cupcakes

This will be my go-to for lemon cupcakes. I got about 30 from this recipe. I did not find them dense at all. When I use the creaming method - as this recipe requires, make sure that the butter and eggs are at room temp. Cream the butter and sugar together for 2 - 3 minutes, and do fully incorporate one egg at a time. This is the stage where we get all the air in to the batter. Work quickly with the flour, milk, and lemon juice additions, stirring as little as possible to thoroughly combine. Over mixing at this point activates the gluten in the flour and makes denser cake. I added two tablespoons of good lemon extract. I removed a bit of each cupcake from the center with an apple corer, and filled them with lemon curd. I topped them with Italian Meringue frosting, and served them as Lemon Meringue Cupcakes - reminiscent of the Lemon Meringue Pie I grew up on. yum.

Bananas 'N' Cream Bundt Cake

This light fluffy cake stood on its own, and is the perfect companion to morning coffee. I did not have shortening, so I used butter. I didn't have walnuts, so I threw in a handful of flax seeds, which added a nice nutty crunch, and gives me an excuse to have it in the morning - since now it's "healthy." Next time I might add some cinnamon and fresh nutmeg.

Creamy Blueberry Pie

Yum yum gimme some! This is one of those pies that evereybody creeps into the kitchen for "just a sliver" again and again. I liked the "eggy" quality that some reviwers mentioned - and accented it by adding freshly grated nutmeg and lemon zest to the sour cream misture, and some cinnamon to the struesel topping.

A Different Carrot Raisin Salad

YUM. My boyfriend and his son are definitely "meat and potatoes" types. So it's satisfying to see them gobble up veggies! I did not have raisins, so I used dried cranberries. Cut the mayo in half and added the zest and juice of half a lemon. Next time I think I will plump the cranberries in the lemon juice and /or vinegar in the microwave for a few seconds.

Balsamic Strawberries

yum! I used organic raw sugar, no butter... and no HEAT! Instead I added about 3 tbsp of very good aged balsamic, sliced the berries evenly on the mandolin, and let them sit in the fridge for a couple of hours. They made their own wonderful syrup. I almost dont want to bother with the ice cream! I'm thinking that investing in the "good" balsamic makes he difference here - and allows the sauce to be rich and thick without the addition of butter. I'm going to be eating this all summer!
