Cream Cheese Penguins

These were time consuming but they looked so cute! I had to let the olives drain/dry because they were too messy to handle while wet. Also, I precut and rolled the cream cheese pieces then rechilled it in the fridge before stuffing into the olives. On some I used cheddar cheese for the feet. They ate them all.

Cream Cheese Frosting II

This is the best frosting I have ever made! And so simple to make. Definatey make sure the cream cheese is room temperature. Next time I may try a different flavored extract like almond.

Stuffed Artichokes

These were soooo good although, I must delegate at least 2 of these stars to the other reviewers. I followed another users advice and boiled the artichokes for about 20 minutes so that I could scraped out the prickleys and the hairs. For the stuffing I substituded the italian bread crumbs for the cubed bread, much easier. Extra virgin olive oil trumps vegetable oil. Also, I added chopped pine nuts and basil. Then I stuffed and baked them in pan with about an 1 1/2 of water. Everyone LOVED them!

Artichoke Spinach Lasagna

This was really good! Even my meatlovin' husband liked it. The "no boil" lasagna noodles were less hassle. We didn't have regular onion so I had to use green onion instead. I only had 2 cups of mozzarella but with the feta it was fine. I'll definately make this again!

Chutney Baked Brie

This was a big hit! I brought it to my mom's for Mother's Day and everyone LOVED it. I used a smaller wheel of Brie and served with some leftover focaccia bread. Will make again.

Italian Butter

I must say this tasted pretty authentic! Definately add the EVOO at least an hour before serving so that the flavors have a chance to marry. We like it best with fresh crusty Italian Bread with sesame seeds on top.

Easy Crab and Horseradish Dip

WOW!!! This was a huge hit! Gotta love a recipe that has only 4 ingredients, heats in minutes and Tastes Great! If you want an easy dip that you can make on the fly, then give it a try!

Naan

Just like the Naan you get in the Restaurant! I thought I botched this recipe because the dough didn't rise quite like I'd expected. Either I was very wrong or this recipe is very forgiving. We decided to freeze half of the rolls for another time. Another time came two days later:)

Bacon Water Chestnut Rolls

These were pretty good. We found that thinner sliced bacon or low sodium bacon worked best. It crisped better and stayed wrapped around the chestnuts - didn't need to bake WITH toothpicks. I waited to insert the toothpicks before serving.

Kabob Marinade

Excellent! Used this on cubed beef for our big BBQ and there were no left overs. We added red and orange peppers to the scewers along with a mushroom here and there. Instead of soy sauce I used Tamari Sauce since it's not as salty. I also made extra marinade for portabella mushrooms since my sister is a vegetarian. She absolutely loved them! It's great over rice! too!
