This was my first time making pancakes (the pancakes of my youth were so heavy and leaden it took my husband about 10 years to convince me to make them again!) so take this with a grain of salt...
The first pancake I made the batter was really thick. It wouldn't spread out or anything, so I assumed my batter needed more milk. Well that was a mistake. I had one moist, fluffy pancake and the rest, while cute perfect circles, were a little tough and spongy. So don't make my mistake!
I do think they're a tad too sweet. I had to cut back the syrup I used, which is a shame because real maple syrup is awesome. I'd add less sugar in future.
