Finding Grace In the Kitchen
About this Cook
I have been helping in the kitchen since I was 5 and cooking meals on my own by the time I was 11 years old. I worked for 4 years at a summer camp in their kitchen and now work for a commodity group helping consumers with cooking questions. My husband half teases that the reason he married me was because I knew how to cook.
My favorite things to cook
I love to bake, especially yeast breads. For two years in a row, I have donated my baking to our United Way silent aution. First year was a dozen cinnamon rolls and last year was two loaves of challah. I also make a mean oatmeal chocolate chip cookie.
My favorite family cooking traditions
My family started me young. I love the basic fact that my mom and both grandmothers encouraged me in the kitchen and let me help when age appropriate. Cooking with kids and letting them be a part of the meal and the experience not only creates better eaters but also helps them as they become adults.
My cooking triumphs
My husband telling me that my cinnamon rolls were as good as his grandmother's.
My cooking tragedies
First year in summer camp kitchen. First day, I was put in charge of making the carrot cake for dinner. The flour in the bin looked a bit funny but I put it in. Just after we pulled the very flat cakes out of the oven, we did the kitchen tour. The "flour" I used was actually Non-Fat Dried Milk. Oy!!

Fresh Peach Cobbler II
My husband bought a lug of Colorado peaches especially so he could have peach cobbler. Putting the peaches in the oven while fixing the dough works well. I used a slightly larger Pyrex dish to bake in and used a little over 4 cups of peaches, but kept the rest of the ingredients. Instead of cutting the stortening into the dough, I grated (large hole side) 1/3 cup of frozen butter, which made it easier to mix. Also added a little nutmeg to the dough. Plenty of dough for the extra peaches. So easy and so good.

Tres Leches (Milk Cake)
I love to take this to potlucks. Everyone is convinced that it must be hard to make. My only problem is that at every step I think that I must have screwed up. The cake batter is very thick -it's okay. The cake bakes to almost overbaked - it's okay. There is almost a quart of milk mixture - it's okay. I do cheat and skip the heavy whipping cream and just use extra creamy Cool Whip. The only issue I have is that it doesn't really keep long. I usually make it the day before and "frost" it just before I need to serve. I think it lasts in the fridge about 3-4 days afterwards.

Hot Chocolate Mix II
One recipe makes a large batch. I ended up adding 2 regular sized instant chocolate puddings that several people mentioned. And since I couldn't find a 16 oz container of chocolate mix, I used the whole 30 oz container that I did get. (After testing it first with just amount in recipe) DH said it still needed a little more. So I added about 1/4 dark chocolate cocoa, but I am not sure that it made a huge difference. I would like to try it next time with flavored creamer, or add cinnamon. I think it makes a good mix and hope my friends like it too.
