New Year's Day Black-Eyed Peas

These were awesome! I had to use canned peas since we don't have dried in my very small town in Ontario. I added extra garlic, some ground bay leaves and red chilis. I added the tomates and just mashed them up with the potato masher so they weren' too pureed. I then added my ham and water and about 1cup of water. I also added a tbsp of bacon fat. Simmered on the stove for a few hours and served over rice. Delicious and easy, I will definitely make this again. Do I have to save it for just new year's though, I could eat this once a week!

Restaurant Style Egg Drop Soup

This was perfection. I no longer have to drive to China town for my favourite soup, I can make it. I used the low sodium chicken broth, used green onions instead of chives and added some oyster mushrooms. I added the cornstarch before the egg and added also a dollop of sesame oil to finish it off. Some low sodium soya sauce and everything is set to go.

Tangy Turkey and Swiss Sandwiches

This is a great sandwich, the dressing is a wonderful addition. I used low fat mayo and dijon mustard. I ate it with the tomato but ended up taking it off and liking it better. Will definitely make again, I am also going to try adding some roasted red peppers on it as well. i plan to have this for dinner again tonight.

Baked Sweet Potato Sticks

These were fantastic! I cut them smaller to make them more like sweet potato fries and they were perfect. Couldn't really taste the paprika. Once they start to cool off they have a great flavour. Will definitley make these again - great flavour, super easy and I have half a sweet potato left over. Maybe I'll make more today.

Beef and Roasted Red Pepper Sandwiches

Super quick, easy and delicious! Left out the garlic powder but other than that what a nice sandwich. I didn't think the hubby would like it with the red peppers but he qwolfed it down. Definitely, a nice fix for when I am in a hurry and still want something yummy. I didn't need anything else to go with it, the sandwich was so filling.

Chewy Noels

Quick, simple and very yummy. Made no changes and it is truly a hassle free treat that tastes great. Not to sweet but not bland either. Made one batch and then made another to put into the Christmas baking boxes.

Caramel Shortbread Squares

These are the hit of the Christmas boxes. They are delicious. I had a little trouble with the caramel, accidently doubled the recipe and had to use the whisk to belnd it better. Make sure to do the double boiler method to melt the chocolate, also add butter or margarine to make it smooth and shiny. I melted it in the microwave the first time and even with the addition of margarine, it still came out pretty looking. Not actually as much work as I thought so I will be making them again.

Meat Filled Manicotti

I used this filling for shells instead of manicotti and it was delicious! I added fresh garlic and italian seasoning to the meat which gave a nice flavour. The filling looks gross but once you top it with sauce and cheese it looks (and smells) yummy. I used Healthy Choice Garlic Lovers sauce with onions and that definitley finished it off perfectly. Had extra noodles and sauce that I froze for another time.

English Muffin Loaves

This is great. Not as nook and crannyey as regualr english muffins but the taste is spot on. Nice and quick but the stirring gives you a workout. Rose nicely and tastes amazing with some apple butter. Even my husband likes it and he is not a huge fan of english muffins.

Pork Chops with Blue Cheese Gravy

This was divine. I used fresh garlic that I threw in the pan with the margarine, I also used a little bit of olive oil. Sauteed the mushrooms with the chops and took them out and kept them warm while making the sauce. Probably added more than 2 oz. of blue cheese but totally worth it. The sauce was very rich but an awesome treat. I have some sauce left over so I might add it to pasta.

Mini Pumpkin Butterscotch Muffins

These are amazing! I used salt-free Becel and splenda sugar and added just a touch more pumpkin. I made 6 jumbo muffins and cooked them about 20 minutes and they are perfect - great texture and just a touch of decadence with the butterscoth chips while still tasting the pumpkin. Will definitely make these again!

Shrimp Scampi Bake

This was fabulous! I only used about 1/4 cup of butter and it didn't make enough sauce, so that is my bad. Next time I will use more butter but not the whole cup. I added basil and a pinch of cayenne, but it's the dijon and the lemon juice that just make things pop. Served over linguine that I had wilted some spinach in and wow! what a combo! Will definitley make this again!

Orzo with Parmesan and Basil

Perfect. I had to use dried basil and didn't use as much as listed, but this was delicious. Was worried that it would turn out to be more of a risotto, but once you add the cheese and basil, it is definitely a delicious pasta side dish. The hubby really enjoyed it too.

Good Old Fashioned Pancakes

These were fantastic! I now have a new recipe for pancakes. I may cut the baking powder jsust a little bit because they were just a little too fluffy. Added a touch of vanilla and just a splash more milk. My husband ate them so fast he barely chewed. Very nice flavour, gorgeous texture and pretty much perfection.

Linda's Lasagna

This came out awesome. I did add peppers, mushrooms and onions to the sauce. Also added spinach to the cottage cheese mixture. Using the no-cook noodles, this came out great. I can never do lasagna and now I have a great recipe. I even had left over sauce. Will definitely make again.

Balsamic Chicken and Fresh Mozzarella

This was amazing! I made it with 3 chicken breasts marinating the chicken from frozen. I baked the chicken instead of frying and it stayed nice and moist. I also put the cheese, basil and tomato on top and poured the balsamic on top of that and put it back in the oven for 5 mins. The chicken tasted awesome and the topping was perfect. My husband told me the chicken was really good (high praise in this house) and he said it a couple of times. Will definitely make again! Served with Panzanella salad and it was the perfect combo.

California Grilled Veggie Sandwich

This is delicious. I used both red & green peppers, left out the squash and added mushrooms. I cooked on the foreman grill and left out the oil. Grilled veggies are divine and when I brought this for lunch someone asked where I had bought it. A definite must eat all summer long. Now I will have something for all my garden zucchini. The only thing is I might add some mozzarella along with the feta.

Irish Chicken and Dumplings

this was amazing. I used 1 can low sodium cream of mushroom, 1 of cream of celery. Used boneless/skinless chicken thighs. Instead of carrots and celery I added - mushrooms, green beans and corn. Is a delicious meal, and husband loved it. Made homemade dumplings with it. Will definitely make again.

Spicy Honey Mustard Pork Roast

This was divine. I used a pork shoulder roast, and cut out most of the fat. I didn't use all of the pepper, but the sauce was delicious. Didn't overwhelm the meat, and the meat came out very moist. Not dry at all. I didn't even make a gravy, and we didn't need it. I think this may be the only recipe for pork roast I will use.
