Tuna Noodle Casserole from Scratch

This was awesome! I cut down a little bit on the butter. I added some of the cheese to the sauce mixture and used crush up croutons for the topping with no butter. Was looking for ultimate comfort food and this was it! Took a little work but worth it for the lower fat and sodium I was looking for since I used skim milk and light cheese. Will definitley make again!

Japanese Zucchini and Onions

I can't belive I haven't rated this one. It is amazing. I have made it so many times and there is never a complaint. this is fabulous as a veggie side dish and goes really well with rice. I will buy zucchini out of season so make this one!

Tasty Lentil Tacos

These were fabulous! I made it exactly to the directions and they were perfectly seasoned. I did have to cook it about 15 minutes longer covered and then an extra 10 minutes uncovered, but other than that what a treat! I preferred them to the meat version I also made. They were the perfect texture for taco filling, but would be great alone, with tortilla chips or on top of a salad. I ate quite a bit, and had to stop myself from eating more. These leftovers will definitely be finished and I will most certainly make these again. Between these and the Delicious Black Bean burritos, I can see that being a vegetarian isn't all that bad!

Roasted Butternut Squash and Garlic Lasagna

This was really good! I did modifications to make it lower fat. I used skim milk instead of reagular milk and only used about 3 cups. I also left out the cream step and I think that would have made it over the top rich so I am glad I didn't use it. I added a layer of spinach and also chopped up some onion that I added to the butternut mixture. I didn't have enough parmesan so I added skim milk mozzarella. I also added some nutmeg and thank goodness I did because it would have been super bland without it. I pre-soaked my noodles and that worked super well. My husband did not like it, but it would be a fantastic treat for guests as it is tasty and filling, but not too rich.

Rosemary Ranch Chicken Kabobs

Fantasitc! Another recipe I repeat often. I do leave out the sugar and use dried rosemary instead of fresh- I would like to try the fresh sometime. I tend to marinate mine a long time and also froze chicken with the marinade and that cameout great as well. Perfect on the BBQ but also did in the winter on the indoor grill.

Added more veggies and it just wasn't very flavourful or worth the time and effort. Always on a quest for a good stir-fry and quick meals and this doesn't make the list. Sorry.

Best Ever Brisket

This was a brisket fail! The cook time was way over the top - at least for my oven. I ended up with a blackened piece of "meat". What I could taste, tiniest piece in the middle was good, but there wasn't enough dry, blackened meat for even 2 people. I had to throw it out and it was a total waste. I would like to try again adjusting cook times, but where I live Brisket is almost impossible to find and expensive. What a bummer!

Savory Lemon Limas

These were delicious, made exactly as recipe stated. Sort of a sweet and sour feel to them. had them for lunch the next day and still yummy. Husbnad was not a fan, so if I make again, will do it just for myself. Nice change for a veggie!

Best Guacamole

I've made this twice now and it is fabulous! It is kind of plan so I did add some cumin to give it a little spice, hence the four stars. I doubled it the second time to use up a bunch of avacados and served it at Easter and it was a hit! Definitely my go to recipe and will make a lot for sure!

Slow Cooker Turkey Breast

Perfect! Can't believe how great this was with only 2 ingredients. I made up my own, onion soup mix from online somewhere to cut the sodium. I also rubbed the breast with it while frozen and defrosted overnight. I didn't do the full hour on high(had to leave for work). Cooked 10.5 hours on low, and it was cooked perfectly and really moist! I used th liquid that came out and mixed with a low-sodium pack mix for some gravy and had the perfect not quite Christmas dinner on a Tuesday. There are leftovers and I cannot wait for a sandwich with them! Will definitely make this again, Thanks for the recipe!

Ricotta Gnocchi

Fabulous recipe! I like everyone else had to add more flour - but like anything that is dough like, you always have to work with the ratios of liquid to dry ingredients. I made them one night , refrigerated and then cooked the next night. Really nice flavour and texture. I served with a tomato sauce and meatballs and it was great. I found it to be a quick and easy recipe, I had the dough mixed up and the ricotta shaped in just over 10 minutes. Next time I will make double and there will be a next time! Thanks for sharing! Now I can impress my husband with homemade "knuckles"

Whole Grain Waffles

These are great. I used just regular whole wheat flour and used unsweetened peach medley appleasue (one of the little snack containers) which was more than 1/4 cup so I measured it out and then added the oil to make the difference. I did have to add 1/4 cup more WW flour to make it less liquidy. I also added fresh blackberries. The flavour is really nice and they came out nice and fluffy. They smell amazing cooking. I plan to freeze the rest to eat at my leisure. Thanks for the great recipe. Since I now have huge bags of wheat germ and flax seed I will make again!

Cauliflower With a Kick

This was pretty good, definitely needs more parsnip as once it was mashed I couldn't even taste it! Nice way to lower carbs and substitute as mashed potatoes. I wouldn't make it all the time, but with more parsnip added, I will make again.

Slow Cooker Cider Pork Roast

It had no flavour, even the apples didn't taste like anything. I used extra onion and left out the celery, but that should not make a difference. The meat had a very unappetizing texture and as I said before tasted like nothing.

Roast Beef Stuffed Shells

Wow! I have been wanting to try these forever - but I just wasn't sure - the combo just didn't want to work in my head. Well, I made it last night and I am kicking myself for not doing them earlier. I did scale it down for 2 people. I used a roast beef I had made on the weekend, the gravy was from that as well. I had some frozen pre-cooked shells from another recipe and this made the dish ready to bake in under 10 minutes. I will definitely make this again and again. It was delicous - the combination of the horseradish and the gravy was so good! I couldn't realy taste the cheese and I am not sure if it is needed so when I do make it again I might leave it out. Oatmeal Pancakes II

These were really pretty good - I used half whole wheat flour and half regular white - the mixture was quite thin so I added another 1/4 cup of flour. I also used Splenda and did the milk with lemon juice trick for the buttermilk. I did add raspberries and blackberries and that really made them yummy. If ihadn't they would have been really boring. Still, will probably make again adding more vanilla and definitely the fruit.

Serbian Ground Beef, Veggie, and Potato Bake

Yeah, this just wasn't the thing for us. My husband put this firmly on the no thanks list. It was very bland and I doubled all the seasonings. I also added 2 more potatoes and it was still not enough. I actually liked it, but definitely not enough to make again. The only things I didn't do was use wine as I didn't have any (used beef broth instead) and left out the carrot. Cannot see how either of these would have made the recipe any more appealing. Sorry, not a fan.

Apple-Feta Tossed Salad

This was fantastic! I wanted to do something different ofr our salad with dinner. I had to use pecans instead of walnuts and used brown sugar instead of regular. I did cook the nuts in the toaster over and I left them a little too long, but they were still fabulous. I used romaine and the mixed greens (msclun mix). I did also add some red onion for just a little zing. The only thing I didn't do out of pure laziness was make the dressing. I taste tested with Raspberry Honey Vinaigrette and Lemon Poppyseed and the Lemon Poppyseed was the winner. Husband didn't have any - not his kind of salad, but that's fine I plan on eating every last bite. I had two servings if this instead of more of the main dish. Came together super easy (even easier if I pre-make the nights and store them) so I will definitely make this again! Thanks for sharing!
