Royal Coconut Cookies

Have made these cookies a couple of times now. I followed the recipe exactly as is and it's foolproof. Makes a nice, flavourful cookie. I used a small ice-cream scoop and the bottom of a glass to press down to make it round and somewhat flat. Wonderful!

Heavenly White Cake

I'm so happy with the way this cake turned out. I followed others' tips and increased the milk to 1 1/2 cups. I baked it in two round cake pans and then sliced the cakes to make 4 layers. I iced it with Rick's Special Buttercream Icing. The vanilla flavour is fantastic. What a treat!

Banana Cream Pie I

This was so easy to make. I adjusted the serving size to 12 for a deep dish pie. I took note from the comments and used whole milk. It turned out perfectly. Thanks for this keeper.

Pizza Dough III

Have found the perfect pizza dough. The bread flour really makes all the difference. Now we can pick up a slice and eat it. All crusts I've made before weren't sturdy enough to do this. Tastes great too. Thanks for the recipe. Will be used often.

Maple Pecan Shortbread Squares

I'm making these for the second time as the first batch turned out so wonderfully. This time I'm using Splenda brown sugar to cut the calories. Like others, I add 1/2 tsp maple extract for more flavor. This deserves 5 stars!

Cranberry Sauce

This was my first time making cranberry sauce. I always thought the canned was good enough. Never will I buy canned again! Everyone loved it and I'm so glad I made a large batch because now I have it to serve with my turkey pot pie. I followed other reviewers and only used 1/2 cup of oj and 1/2 cup water. I also added another 2 cups or so of cranberries as 12 ounces didn't seen nearly enough.

Pumpkin Gingerbread

I've made this recipe twice now with fabulous results. I read the reviews and cut the sugar slightly with 1 1/2 cups white sugar and 1 cup brown. I didn't have enough oil so did 1/2 cup oil and 1/2 cup melted butter. I also upped the spices with a teaspoon of pumpkin pie spice - love that stuff! Ice it with Cream Cheese Frosting II from this site. Makes a wonderful Christmas gift with bits of candied ginger sprinkled on the frosting.

Ye Ole Gingerbread

This recipe did not turn out right. It's missing something, eggs??, I don't know but it didn't rise and was kind of greasy. Still edible so I'll take it to work - they'll eat anything there. Waste of time and ingredients in my opinion.

Ginger Beef Stir-Fry

I used marinated flank steak for this recipe. I marinated it in Teriyaki sauce then cut in strips. Added julienned carrots, red and green pepper, garlic and onion. Doubled the sauce and served it on sticky rice. Delish!!

Lemon Raspberry Jumbo Muffins

This recipe is definitely a keeper. I subbed the half-n-half with coconut milk and at the last minute sprinkled the tops with white chocolate chips. 23 minutes at 400 in a jumbo muffin pan. Made 6 large muffins. I am eating one right now and deem it delish!

Maple Pancakes

My husband loved these pancakes. He said that cooking them perfectly is half the battle. I think they turned out great so gave it a 5 rating. I subbed the veg oil with melted butter and added 1/2 tsp maple extract. I sifted the dry ingredients to avoid lumps. It's very important not to overmix when blending in the wet ingredients.

Blonde Brownies III

I made a couple of changes to bring this recipe closer to another I have for chocolate brownies that is very successful. I omitted the baking powder and increased the eggs to 5. I also decreased the flour to 2 1/2 cups. I added 1 tspn vanilla extract, 1 cup walnuts and 1 cup white chocolate chips. They were a big hit. Another keeper. Thanks!
