Tater Tot Bake

Reviewed: May 28, 2003
Easy, tasty recipe. I followed some others' advice and mixed the soup with the meat mixture, and I cooked it for a little while longer. I also added one package of the beef OXO powder for extra flavor. I thawed the tater tots and then put them on top of the meat, adding the cheese for the last five minutes of baking. Family enjoyed it; reminded me a little of Shepherd's Pie.

Sarah's Applesauce

Reviewed: May 19, 2003
This is the simplest of recipes and extremely delicious! We used Spartan apples, and added the sugar and cinnamon after cooking so as not to overdo it. We puréed the apples in the food processor and the applesauce turned out very well. Yummy!

Apple Scones

Reviewed: Apr. 25, 2003
Very nice scones. I used 2 apples and added some cinnamon to the dry ingredients, and I actually grated the butter in and then used the same grater for the apples. For a sweet touch, I drizzled icing over the tops. Son loved them!

Yummy Beef

Reviewed: Mar. 5, 2003
I sat a moment not really knowing if I should post this; I can't say I would make this again, but I'm glad others enjoyed it. While it did smell delicious while it cooked and the meat was very tender, the dish was just overwhelmingly "tomato". My family picked through for the beef, and left the rest including the sauce. They just didn't care for it. Sorry Melissa, but thank you for posting it.

Baked Teriyaki Chicken

Reviewed: Mar. 1, 2003
This was SO good! We need more than five stars here! The sauce was delicious and it doubled easily (recommended). What a delicious combination of flavors. My only substitutions were to use regular vinegar and lower-sodium soy sauce, and it turned out great. I pour the entire amount of sauce on at once and let it bake until the chicken is done - so easy this way. Be sure to line your pan with a double layer of foil for easy clean-up. I serve it with sticky rice and broccoli - the family LOVES this and requests it often.

Chicken, Stuffing and Green Bean Casserole

Reviewed: Feb. 11, 2003
I used boneless breasts for ease of preparation; I cooked them with the soup mixture for 30 minutes, then topped with the stuffing, french-fried onions, frozen green peas instead of beans, and cheese and cooked for another 25 minutes. It was a tasty and easy dish, although 2 out of 3 of us found it too salty. Low-sodium soup and/or stuffing mix might be a good idea. Hubby loved it. Thanks!

J.P.'s Big Daddy Biscuits

Reviewed: Feb. 10, 2003
I wasn't expecting anything better than my usual biscuit recipe, but I found these to be moist and light. The texture before rolling and after baking was soft and silky. I got 12 small biscuits, but next time will try for 8 big bicuits. My advice is to portion the dough into pieces and shape into biscuits instead of rolling and cutting; rolling them always means leftover scaps. Good biscuits! Thank you.

Biscotti

Reviewed: Jan. 16, 2003
Easy and delicious biscotti! I love the fact that they contain oil, not butter, as this adds to the ease of making them. I do have anise extract, but I chose to use 1 tablespoon of almond extract instead. I drizzled the tops with melted chocolate and they were perfect to dunk, or just enjoy with a glass of milk. This recipe is so versatile, you could also add your extras (nuts, flavorings, liqueur) and they would be yummy.

Libby's® Pumpkin Cranberry Bread

Reviewed: Jan. 15, 2003
Absolutely delicious pumpkin bread... great flavor, nice and moist, and it rose very high. I omitted the cranberries, and substituted half of the oil with applesauce, and it came out great.

Fabulous Fruit Salad

Reviewed: Dec. 29, 2002
I also doubled this recipe and took it to Christmas dinner. I used 2 red apples, 2 green apples, a can of mandarine oranges, celery, 1 container each of lemon and vanilla yogurt, and I added the dried cranberries and walnuts just before serving to preserve texture and crunch. I received several compliments on the salad, and my husband loved it. (For next time, I will probably strain the yogurts first using a coffee filter, as there was quite an accumulation of liquid at the bottom of the dish.) Very enjoyable salad.

Whipped Shortbread Cookies

Reviewed: Dec. 18, 2002
These were awesome cookies! My 12 year old son made them for his classmates and he used sprinkles instead of the cherries, and he baked them for 9 minutes. They were melt-in-your-mouth wonderful!

Banana Banana Bread

Reviewed: Dec. 6, 2002
I enjoyed this banana bread; I liked the use of brown sugar instead of white. I added a teaspoon of vanilla for subtle enhancement, but otherwise followed the recipe exactly. I did find it wasn't a high loaf... perhaps it was just very moist and dense with so many bananas that it didn't rise very much, but the flavor was lovely.

Joey's Peanut Butter Cookies

Reviewed: Nov. 23, 2002
I've nothing to add that's new, so shall simply echo the sentiments... VERY peanut buttery and delicious!! I chilled the dough for several hours as I was going out, then rolled it into balls and baked the cookies later in the day. They came out perfectly. Thanks!!

Creamy Rice Pudding

Reviewed: Nov. 19, 2002
Delicious!! This rivals KozyShack for creaminess, taste, and consistency. It was very creamy and lovely. I didn't add the raisins as the family doesn't like them, but I followed the rest of the recipe and it came out perfectly. I used "medium grain sticky rice" and I think this was the key to the consistency. Thank you Erica!

Mexican Cream Cheese Rollups

Reviewed: Nov. 11, 2002
I made these to take to a party and most everyone enjoyed them. They make a very pretty presentation if you add chopped parsley, and slice them on the diagonal. Depending on your taste, you can omit different ingredients; I have never used olives and they still turn out great. You can also use different flavors of tortillas; spinach (green) and tomato (red) would look festive for Christmas! UPDATE: I continue to take this appetizer to parties and ALWAYS receive compliments. It is just so easy, tasty, and pretty. Serve with salsa and you have a great appy.

Aileen's Punch

Reviewed: Nov. 9, 2002
Delicious combination of juices; I served this for Thanksgiving and everyone enjoyed it. I saved the leftovers for breakfast! My son and I had fun making ice cubes from juice, and we froze tiny pieces of orange slices and cherries in each cube. This way, the punch stays cold, does not get watered down, and it is very colorful.

Four Spice Crackles

Reviewed: Oct. 28, 2002
Delicious! I used margarine instead of butter and regular sugar instead of coarse sugar because I had to, and they were still wonderful. Having read the reviews, I cut back slightly on the molasses and ginger; I baked mine for 11 minutes until they were still slightly soft, and this produced a moist and chewy cookie. I will make them again, and will try to get the coarse sugar to roll them in this time... I'm sure this will make them absolutely perfect!

Awesome Slow Cooker Pot Roast

Reviewed: Oct. 2, 2002
Well, I need to buy a vowel because... "O"... my... goodness! This was so good!! It smells incredible as it simmers away all day long. It was so easy, and the meat was cooked to perfection. I served the gravy over mashed potatoes (you can thicken it, but I didn't and it was fine). Fabulous!!!
