Peppermint Biscotti

Very nice biscotti. I baked mine on parchment paper and although some of the candies melted, it certainly wasn't a big deal. If the bottoms burn a little, just dip them in melted chocolate and no one will ever know. I decorated with the melted chocolate and crushed candy canes, just like the picture. I am going to put them in cellophane gift bags, tie with a pretty ribbon, and give them to my guests on Christmas Day.

Scrumptious Salisbury Steak in Mushroom Gravy

Can't give it less than 5 stars, as hubby and son declared it "delicious" and want it every night! I like the fact that it is not made with condensed soup - this way, I can control the salt. I used just over 2 cups of milk, and the gravy was very thick (will use slightly more, next time). This was a hearty and filling meal.

Sugar Cookie Icing

This was a shiny and professional looking icing. I liked the fact that it didn't contain meringue powder because I normally don't use it. I substituted a homemade sugar syrup and it worked just great.

Dijon-Tarragon Cream Chicken

This was delicious! I doubled the amount of sauce, and used light cream and that worked just fine. I also used fresh rosemary, since we have it growing in our garden. Served it with buttered noodles and cooked broccoli. Very nice dish. UPDATE: I have now made this with heavy (whipping) cream and the result is much better!! The sauce doesn't break or curdle when you use the heavy cream as it does with the light cream. The taste is more intense and my hubby couldn't stop raving about the sauce!! I won't make this often because it is fattening, but when I do I will always use the heavy cream from now on. YUM!

Fettuccini with Mushroom, Ham and Rose Sauce

Delicious. Husband said "It looks like a restaurant meal." Yea! My only substitution was for the heavy (whipping) cream: I used 1 cup of light cream (10%) and 1/2 cup of homo milk. It tasted fine but I'm sure with the heavy cream it would have been pushed to decadent! Also, remember the red pepper flakes are *optional* - I don't think you can complain about the heat if you add the entire amount; 1 tsp. is a lot, so use sparingly if you want to add it. Thanks for the recipe!

Sugar 'n' Spice Nuts

Delicious. I used just almonds (they were majorly on sale) for my trial run before Christmas this year. I used parchment paper and they did not stick too much; after taking them out of the oven, I transferred them to a clean parchment paper-lined tray to finish cooling. I didn't have all the spices called for, so I added a little ground black pepper and even a pinch of chili powder. Son loved them and declared them "easy to eat". He wants more sweetness next time, more like a candied nut. I will try another batch with more cinammon and sugar. Thanks! . . UPDATE: The next morning, the leftover nuts were sticky and gooey. I don't know if I did something wrong, but they had lost their dry crunchiness. Family didn't want them. Just wanted everyone to know, as this can be an expensive recipe; I don't think I'll make them for Christmas gifts.

Alyson's Broccoli Salad

I can't give it less than 5 stars. Hubby declared it "delectable". Easy to prepare - left the bacon out until just before serving, but next time will use less mayonnaise as 1 cup is far too much. I used about 1/2 cup of sunflower seeds.

Best Ever Blueberry Cobbler

Very good. Added a little milk to the batter, and sprinkled some sugar on top before baking, for a crunchier crust. Just know that this is not a thick crust, though. Delicious with vanilla ice cream.

Key Lime Pie VIII

Absolutely delicious! My husband couldn't stop raving! I used a homemade graham crust, and freshly whipped cream in place of the Cool Whip (1 1/4 cups unwhipped). Per reviews that it was too tangy, I cut the lime juice to 3/4 cup. This was a beautiful color with the lime zest throughout. Wonderful! UPDATE: I served this on the dessert table on Christmas Day, garnishing each slice with a rosette of whipped cream and a small piece of fresh lime - it was the first thing gone! Everyone loved it and it is so refreshing in the middle of winter.

Rosemary Lemon Grilled Chicken

I gave this 4 stars for ease of preparation. I used my blender and it came together quickly; I substituted oil as others suggested and it was fine. I was afraid the rosemary would be too strong a flavor, so I cut back. Next time, I will put in more fresh rosemary, as we have it growing in our garden. The chicken was moist, but lacked the flavor "punch" I was hoping for. But thanks - my husband LOVED it!!

Ham and Cheese Bowties

This was delicious and comforting. I threw in a handful of frozen baby peas and that was yummy. I also served it right away without baking it, as I find so many casseroles get dried out when you bake them. Super good!

Cinnamon Rolls II

Definitely a good place to start. I gave 4 stars because they didn't rise until I put them in a warm oven, and only then it was minimal. As I was kneading the dough, I found the yeast had not dissolved at all - there were little granules throughout the dough. I wondered if this would be a problem and I think it was. Next time, I will try dissolving the yeast with the warm milk, and I may let it rise first before forming the rolls. Hubby and son loved the taste though, so I will give this another try.

Banana Crumb Muffins

I used oil instead of melted butter, and only 2 bananas and it worked well. The crumb topping was the best part and set this muffin apart from the plain banana muffins I've been making. Will make again.

Make-Ahead Mashed Potatoes

These potatoes turned out fluffy and light and full of flavour. Rave reviews from everyone at the table, even the little kids!! I tweaked it slightly by using only 3/4 cup sour cream and I only had a tub of garlic and herb spreadable cream cheese, so I used about 3/4 of the tub. After they were heated through, I took the advice of a reviewer here and stirred in a little butter just before serving (only about 2 Tbs.). Turned out fabulous. Although this dish is rich and fattening and I probably won't make it often, the ease of preparation and the time and trouble it saves on the "big day" was definitely worth it. Yum!!

Gingerbread Biscotti

These biscotti are delicious! I made it with oil as stated in the recipe and used all white flour, and they turned out great. Please do not let the oil scare you - you do NOT have to substitute butter, margarine, or shortening. This recipe couldn't be simpler and the oil is the reason! Just add it in. I did bump up the spices, and I dipped the biscotti in melted white chocolate and then drizzled with melted dark chocolate for a pretty effect. Absolutely incredible. UPDATE: I made these for Christmas for some of my co-workers, and ALL of them absolutely raved!! I wrapped them up in colorful cellophane bags from the dollar store, and tied with a pretty ribbon. I will definitely make these again!

Blueberry Sauce

I feel there is too much cornstarch for this recipe, and the amount of liquid needs to be adjusted. It was extremely thick and coagulated upon cooling. I had to thin it out with water and then it was just nasty. I was disappointed. If you make it, I would suggest ONE tablespoon of cornstarch, more berries, and 1 cup liquid IN TOTAL.

I made this to put on top of bread pudding. I'd never made a vanilla sauce before, but it looked easy enough. I halved the recipe and instead of cream, I used whole (homo) milk and vanilla extract. Other reviewers said to not let it cook too long, so I watched it carefully and I also strained it before serving. It came out perfectly, even using the lower fat milk. It was delicious warm, and wonderful cold the next day. Yummy!
