Kielbasa and Cabbage

Reviewed: Oct. 24, 2014
Delicious! I made it as written except I used apple juice in place of the water and sugar per another review. I suggest when buying your cabbage, choose a really green one. Mine was more creamy than green and the finished product was a little drab. BUT - great flavor and oh my husband LOVED it!!

Cranberry Sauce

Reviewed: Oct. 11, 2014
Using use all orange juice casued the flavor to be "off"... I have tried it both ways, using OJ and using water, and the water/sugar/cranberries way is the best. You do not have to put OJ in your cranberry sauce but if you like orange, maybe some zest or a teaspoon of OJ.

Baked Garlic Parmesan Chicken

Reviewed: Oct. 2, 2014
Family loved it, must give 5 stars! Made it as written AND did add some bottled Caesar salad dressing to the olive oil and garlic to dip the chicken into. Don't get upset - I know it's not in the original recipe, but this is my tweak. It was PHENOMENAL. Will make again.

Buttermilk Pie

Reviewed: Sep. 16, 2014
OK, well this was interesting. I read a LOT of the reviews and although I did add less sugar, I pre-baked the crust for a few minutes and baked the pie at 400F for 15 min. and then 350F for about 40 minutes. The texture was not as creamy as I would have thought. I had never made a pie like this before or tasted one. I think the family was being kind but didn't really like it. It took a long time to finish eating it!

Chicken with Lemon Artichoke Sauce

Reviewed: Jun. 4, 2014
I made this using what I had - I only had light cream which made the sauce too thin, plus it curdled. If you are going to make this, I highly recommend using only whipping/heavy cream. It makes a nice, thick sauce which doesn't break. The flavour was good, will probably make again using the proper ingredients.

Broiled Tilapia Parmesan

Reviewed: May 30, 2014
This was delicious. I used what I had - mayo, butter, lemon juice, Old Bay Seasoning, pepper, and I added a few tablespoons of bread crumbs (and a little water to loosen it up after that!). Broiled fish for 2 minutes, put topping on, broiled again. Hubby and I loved this. Tilapia is such a beautiful fish and this topping complemented it.

Unbelievably Yummy Chicken Casserole

Reviewed: May 6, 2014
Well, I have to say... this WAS unbelievably yummy! The family loved it. HOWEVER, I did NOT add the whipped topping (no way was I doing that, sorry!), nor did I use processed American cheese. I used fresh grated mozzarella and cheddar combined. I also cooked the chicken pieces with some diced onion before putting everything into a casserole dish. With my changes, I will make it again.

Lemon-Lime Cheesecake

Reviewed: May 6, 2014
I made this recipe for Easter dinner. If I made it again I would go with a completely edible garnish like a yellow or green jelly bean on each slice. Most people enjoyed it. To help avoid an unsightly crack, I placed a dish of boiling water in the oven next to the cheesecake, and I didn't overbake it - this did help. I used a lot more zest and juice than the recipe called for - I think you have to - very bland otherwise. Also, I would add a drop or two of yellow food colouring. It did not come out as yellow as the picture shows.

Never Fail Biscuits

Reviewed: Jan. 21, 2014
Nice flavor, easy as any other biscuit. I froze my stick of butter and shredded it in instead of cutting it in. Worked fine.

Banana Cake II

Reviewed: Jan. 14, 2014
Well, good flavour but a little more dense than I was expecting, given the reviews. There was a thin layer of under-baked cake on the bottom. Also, it certainly doesn't need 1 1/2 cups sugar! The over ripe bananas make it sweet enough - I used 3/4 cup sugar.

Magic Cookie Bars I

Reviewed: Dec. 18, 2013
AGREE with the members who said the instructions are faulty - do not pour the sweetened condensed milk over all at the end! It is the FIRST layer after the crust, then you build up the layers on top of the milk.

Angel Chicken Pasta

Reviewed: Oct. 26, 2013
I stayed as close to the original as I could, given my ingredients. Have made this twice now, once with regular cream of mushroom, and once with golden mushroom, and a splash of Italian salad dressing instead of the dry mix. BUT, it was delicious and my family loved it. Added some sliced onions and mushrooms, and served with linguine. I will cut the wine next time, a bit too strong. However, we all loved it.

Chocolate Chia Seed Pudding

Reviewed: Oct. 23, 2013
I am diabetic and had to make some changes to lower the carbs. I declined the honey and the brown sugar, and sweetened it only with 4 packets of Splenda instead. After 48 hours the pudding was still crunchy, I guess because the chia seeds never fully soften. It was interesting, though - will probably make again.

Death By Chocolate V

Reviewed: Sep. 8, 2013
Made some changes as suggested by others: double the butter (1/2 cup), double the water (1 cup), added 1 tsp. instant coffee to water, and had to substitute plain yogurt for sour cream, did not have chocolate chips. All in all, happy with the results and my family loved it. Frosted it with a thin buttercream, allowing it to run down the sides. I would make again.

Mom's Pie Crust

Reviewed: Aug. 29, 2013
I wanted a crust with butter as I do not use shortening or lard anymore. This was incredibly flaky and tasty. The recipe as written is a generous full pie - it was actually too much for a lattice top, but perhaps I can scale down next time. Recommended!! ***UPDATE: Sorry, I guess I am going back to using shortening or lard, as this has disappointed me twice now. It needed WAY more water than called for and it was really tough. Oh well.

Yummy Applesauce Bread

Reviewed: Feb. 16, 2013
I was concerned because there was no egg! Most quick bread loaves have an egg, so I added one. I also bumped up the spices and cut the brown sugar to 1 scant cup. The applesauce was sweet enough. This was delicious, rose high, and sliced beautifully.

Lemonade

Reviewed: Jul. 29, 2012
Rave reviews. I dissolved the sugar in a little boiling water first, then added it to the total amount of water. As another reviewer said, just taste it and adjust to your liking! It's not brain surgery. I also made ice cubes from the lemonade the day before, and added them so it wouldn't get watered down. *UPDATE* We had some left over and tasted it the next day; it's true, the sliced lemons make it very strong, almost bitter. If you garnish with pretty lemon slices, be sure to add them just before serving, and remove them if you have leftovers.

Spinach Stuffed Chicken Breasts

Reviewed: Jul. 2, 2012
I'm giving this 5 stars for flavour and ease. The change I made was to not use mayo, but creamy Caesar dressing. It was very tasty. I also pre-cooked the bacon in the microwave for about 4 minutes first. At the end, I turned the oven to broil, just to crisp it all up. We enjoyed it.
