Delicious Ham and Potato Soup

A flavorful and easy soup to prepare. My wife said give this 4 stars and add it to our regular menu. I did add 1/3 cup diced carrots. Before I added the milk mixture, I used a potato masher to mash the soup.

Linguine with Mushrooms & Ham

We enjoyed this recipe. As others suggested, I added 1 cup of peas, 2 cups of whipping cream. Additionally, I added 1/2 cup of sherry. I will fix this again.

Chuck's Favorite Mac and Cheese

We enjoyed this dish. The first time I fixed it, we thought it was a little too dry. The next time I fixed it I added a can of evaporated milk. The family loved it. No complaints. This will be our standard recipe for macaroni and cheese.

Whole Wheat Beer Bread

A great recipe. I used 2 cups bread flour/ 1 cup wheat. I also added one eggm beaten. Great texture and flavor. Everone in our family like it.

Easy Slow Cooker French Dip

My wife and I thought it was great, but my college-age son thought is was okay. I cooked it in the slow cooker. When I got home from work, I shredded the meat and put it the pressure cooker. Then I poured all of the juices into the presurre cooker. I cooked it with high pressure for 20 minutes, then served. Very tasty! Will do this recipe again. I didn't use beer, but I did use 1 cup of red wine.

Cubanos Frijoles

Super meal. My family loved it and declared that it should be on the "once-a-week" menu for the summer. I served it over a bed of Spanish Rice, topped with corn tortilla chips, then the bean/meat mixture. Sour cream and guacomole on the sides, with a sprinkle of colby/cheddar cheese. I also served it with fresh sliced tomato. For the beverage we had homemade strawberry smoothies. Instead of the chipolte powder (I couldn't find it at the store) I used a small can of chipolte peppers in abado sauce. Chop the chipolte peppers before adding to the beans and meat. (I forgot the wine vinegar, but it still tasted great. The three sprigs of cilantro were just right). I will definitely serve this again. Thank you, William!

Strawberry Daiquiri

I didn't make any changes to the recipe. My family thought that the strawberries tasted a little too watery. The store was out of sweetned frozen strawberries. I used unsweetened strawberries. Next time I might add a scoop of vanilla ice cream.

Best Spanish Rice
