Couscous with Honeyed Almonds and Lemon

I made this for my family last night to go with broiled fish. It was light and citrusy and the almonds added a nice crunch and some sweetness. My 18 month old daughter LOVED it and also ate all of my almonds. So, next time, more almonds. I am also thinking this might work well with quinoa.

Kidney Bean Tuna Salad

Delicious. I used cucumber instead of celery and diced pepper instead of onion since that is what I had on hand. I also subbed fresh basil for the cilantrol and thyme for the dill. It turned out great. My ten month old daughter agrees!

Overnight Blueberry French Toast

I thought this was great as written. The only change I made was using a loaf of challah bread. I broke it up and let it sit on the counter all day and prepped the rest before bed. It was delicious.

The Best Rolled Sugar Cookies

These are okay. I found them rather dry and bland, though improved with frosting. Also, the dough was very hard to work with and I refrigerated it overnight. Edit 10/21/2014:I made these again tweaking it according to some comments. I added more sugar and more vanilla and used powdered sugar to roll them out and they were much tastier. I also divided the dough and wrapped each half in plastic wrap to refrigerate rather than just throwing the covered bowl in the fridge and that seemed to help the dough hold together more.

Traditional Macaroni and Cheese

Rhubarb Margarita

Nothing special. Got hardly any juice so I just tossed the pulp into the margarita. It was frozen and did the job, but I didn't taste much rhubarb.
