Best Lemonade Ever

Reviewed: Apr. 27, 2011
Excellent!!! As with other reviews I cut down sugar to 1 1/2 C. I made simple syrup in microwave until boiling. I only had 3 lemons =2/3 C. of lemon juice. Put lemons in microwave each for 15 sec. then rolled on table to increase ease of juicing. Used Real Lemon juice to make up the 1 1/2 c. of lemon juice. Poured hot syrup over 2 C. ice. Added 5 C. cold water. So I got real pulp and lemon taste w/o squeezing all the lemons. 15 min. tops to make. Also try hot for sore throats, keeps scurvy away!! Happy summer!

Chicken Alfredo

Reviewed: Aug. 23, 2011
Took advice from other reviews. Added 12 oz. cream cheese, 6 tblsp. of butter, 1 1/2 C. milk. For the sauce I melted cream cheese first, then added butter, then whisked in milk. Turned out great. Used red bell pepper and basil from garden. Also used diced fresh garlic, onion powder, dash of cayanne powder, red pepper flakes and parmesean cheese. Sauteed bell pepper with chicken. Next time I will add mushrooms. Thank you for a great reciepe!

Barbecued Shredded Beef

Reviewed: May 4, 2012
Found this to be a great base. In a bowl I used one bottle of beer. Instead of 2 C. H2O I used 1 C beef broth. I didn't have broth on hand so I boiled 1 C of H2O in microwave and put 2 beef boullion cubes in to dissolve. Included 2 bay leaves, 1/2 C cider vinegar, 1/4 C honey, 1/2 C brown sugar and garlic powder, onion powder and hickory liquid smoke. Wisked all together and put foil lined roaster. S & P roast, placed fat side up and sliced 1 lg. onion to put on top of 4lb beef shoulder roast in my lined aluminum foil roaster. After wraping foil up around roast I put another piece of foil across the top of roaster and then put lid on for 5 hours. Let the meat rest and then shred the tender roast and put in aluminum lined aluminum piepans.I made up my mom's BBQ sauce and mixed into meat than put on indirect heat on the grill with hickory chips and smoked it for about an hour. I also added some of the reserved liquid from roast to keep it moist and stirred it on the grill. The best BBQ beef ever and I didn't use brisket. In fact I used a freezer burned roast I had and I hated throwing it away. I shaved off the freezer burn before cooking. Tasted like Jack Stack BBQ in KC. Thanks for the great start on the recipe!!

Cinnamon and Orange Glazed Carrots

Reviewed: Jan. 7, 2013
I was looking for an oven glazed carrot side dish recipe for my pot roast. I did make the conversion to 3 servings, there were only two of us and wanted some leftovers....there were none! I used organic cinnamon so cut back on that measurement. Thank you Katie this dish was excellent.

Stuffed Chicken Breasts with Cornbread Dressing

Reviewed: Jan. 7, 2013
I cut the servings size in half for two people. This was just what I wanted, moist tender chicken with wonderful stuffing you don't spend hours on. Saute'd the onion w/celery & red bell pepper. Also used poultry seasoning w/sage. I will double the stuffing portion next time and decrease cream of mushroom soup w/milk. I steamed brocolli w/ salt and pepper and olive oil as a side dish. Excellent dinner...thank you Carina.

Clay's Grilled Beer Can Chicken

Reviewed: Sep. 13, 2013
Wonderful! Brined the chicken first overnight in fridge. I took your rub recipe and mixed with 1 and 1/2 sticks of room temp. real butter. Let that sit to instill seasonings. Put this mixture in between skin and chicken breast and then covered all of chicken.Put lemon and onion in chicken cavity. Also put hickory chips on in to smoke as it grilled. Used indirect grilling method. Put foil pan under chicken below grate to catch melted butter so it won't flame. Make sure lid is on to control temp. Flavorful and juicy!!
