Tofu Peanut Stir-Fry
Absolutely love this recipe. I usually make it with broccoli, red peppers, onions, and sugar snap peas. Sometime double bread the tofu (flour, egg, flour) and use a mixture of flour, cornstarch, and cornmeal (or just flour/cornstarch or flour/cornmeal). When I don't have access to store bought peanut sauce I've made "Thai-style peanut sauce with honey" from this website. It's very good with this recipe. Thank you for this gem of a meal! It's one of our favorites in my house.

Best Chocolate Chip Cookies
Love these cookies! I've made many batches of them in Peru where I live to introduce Peruvians to chocolate chip cookies. They've become famous in my group of friends here. The only change I make is to always add extra flour at the end because if not I find the batter too sticky and oily once baked. I also always err on the side less sugar rather than more. Slightly under two cups total. I make them as bars rather than cookies since it's faster and I don't have a cookie sheet.

Scrumptious Strawberry Shortcake
It was really delicious and much easier than I imagined strawberry shortcake to be. I didn't use cream of tartar b/c I couldn't find any. Had to add a little flour at the end to make the batter less sticky. Followed the advice of other reviewers and used 3 tsp. of baking powder instead of 4. Kneaded dough right in the bowl and divided it into 12 balls (half flattened). Baked it about 20 min. Topped with homemade whipped cream and a little powdered sugar.
