Aunt Carol's Spinach and Fish Bake

Great Recipe. I did use fresh spinach (2 bags worth) instead of frozen then wilted it over the stove and added some zucchini from the garden. I had Japanese Panko Breadcrumbs i used, left out the egg (bad cholesterol problems) and used Parmesan cheese. This was so good, I had to do it again the next night LOL.

These were fantastic. I served them at a party and everyone was impressed. I would double the recipe though, they were a bit thin and sunk in the middle but overall, incredible!

Chocolate Bourbon Pecan Pie

This pie has certified me into a mini-Martha Stewart. This pie was incredible I followed others' advice with my own twist. I put some chocolate chips on the bottom of the pie and left the rest to melt in the mixture. I used 3/4 cup dark brown sugar instead of white. I used deep dish 9" pans and still had some mixture left over which I froze and made an even better pie later. I even made smaller individual pies for a guest who was a recovering alcoholic and he loved it without the bourbon as well. I also decorated the top of the pie with whole pecans. I'm getting so many requests for this pie it's crazy. GREAT recipe!!!

Blue Cheese, Bacon and Chive Stuffed Pork Chops

My brother is not a pork chop guy but these went over great. He couldn't get enough of these. Great with garlic mashed potatoes!
