About this Cook
I eat vegan as much as possible, vegetarian if I HAVE to. I love finding new recipes or adapting existing ones to fit into my lifestyle.
My favorite things to cook
Cookies, Mexican, anything I can make in my crockpot and walk away for a few hours!!
My favorite family cooking traditions
Beans in the crockpot on Sunday for dinners on Monday. Trying new recipes or recreating them to be dairy and meat free. Sometimes its a success sometimes its a flop, but I keep learning new tricks.
My cooking triumphs
Vegan French toast, "cheezy tofu" rice bake, barbecued seitan, and either pb or tahini cookies. Anything my non vegan kids and hubbie eat and say YUM make it again
My cooking tragedies
pudding doesn't set with "non dairy milk" Seitan should sit a day before using (otherwise its chewier then a sponge).

Pumpkin Cookies III
These were good- I subtitued margarine for shortening, and used 1/2 cup brown and 1/2 white sugar. I threw in some dried cranberries instead of raisins and used the walnuts. I just dabbed the tops with store bought vanilla icing and my kids loved them. They are better cold then hot which is rare for a cookie. Good recipe
