Scandinavian Sweetheart Waffles
Made exactly according to recipe and offered our guests the traditional maple syrup, whipped cream (here in Finland it is traditional, go figure), or Citrus Wild Blueberry Sauce from this site as toppings. This was our brunch last Sunday and we gobbled these babies up. Wonderful. Fluffy while thin, the cardamom becomes a slight hint of flavor after a few bites (with that I mean that it is not overwhelming as it can get in some Northern desserts like bullar) and just great. I would only like to mention that I had to double this recipe to feed four people. one child had two of these, and the three adults had three whole waffles each -that is 12 hearts per person,the whole thing as it comes off the iron- because well, yes, they are as thin as thick pancakes. For those wondering how to measure 1/3 cup into your iron: a regular soup ladle full is just about the right size :) Thank you for the recipe, we all loved it.

Citrus Wild Blueberry Sauce
Recently I got a heart waffle iron and had a brunch featuring Scandinavian Sweeteheart Waffles from this site. As I live i Finland I wanted a sauce made with one of the local berries that we pick int he forest, so I tried this one out using blueberries that I had frozen from last year. This sauce is divine. Citrusy and with a fill-your-mouth-with-blueberries feel. I followed someone else's advice and added extra brown sugar and still I think I could have added more, as we ended up combining it with the other topping (maple syrup) to make it sweeter. This was great, thank you very much for posting such a simple yet delish little treat! :)

Baked Oatmeal
Alright: I have made several baked oatmeals from Allrecipes and up until this one, the one with blueberries was a hit in our home. We just had this for breakfast this morning. I made it with a few common changes in baking: replaced half the butter with applesauce. Lowered the brown sugar to about 1/2 cup, maybe a little less (did not measure). I added an apple and some chopped pecans as someone suggested. I stuck WITH the maple syrup and sued Canadian because well, it is a healthy edulcorant imo. When I mixed it all, it was a bit of a dry-looking mix, so I added one egg, which I had use in other oatmeal recipes. What is outstanding about this is the flavor. With the nuts, maple and cranberries, it is just... old school. Barely sweet, nutty, cinnamoney, and yummy. Hats off, joshllorio :)
