Old Settlers' Baked Beans

Reviewed: Jan. 30, 2012
Beyond awesome! Had to quiet the clan as they were squealing and jumping up & down when momentarily not scarfing it down. This recipe is 5* as written but I made a few minor changes: (i) 1/2 lb. ground pork for beef, (ii) omitted white sugar (used 1/3 cup brown but will cut back next go round as Sweet Baby Ray’s Honey Barbeque Sauce is quite sweet), (iii) 1 heaping tablespoon Taco Seasoning (from this site) & 1 teaspoon dried sage instead of pepper & chili powder, and (iv) 5 tiny red peppers, unseeded & thinly sliced (home grown by friend). Fried bacon separately, and then added it back after half-cooking the meat mixture. Home run for Kathy S.

Mexican Bean Pie

Reviewed: Jan. 29, 2012
A promising dish but a tad bland as written. We will try this again but using a sauté of onion, bell pepper, garlic, fresh cilantro, and upping the spices, before mixing in the beans. Rather than add salsa as a garnish, plan to layer in picante sauce to make this less dry. The pie did not come out piping hot with 20 minutes in the oven, and plan on leaving it in longer the next time. With some minor tweaking to satisfy our personal tastes, expect this bean pie to make it on our ‘make again’ (5 star) list. Thank you ADELE21 for sharing.

Grandma's Slow Cooker Vegetarian Chili

Reviewed: Dec. 28, 2011
sellitman, ain’t buying it as chili! An okay, but not spectacular, bean casserole. If compared only to other vegetarian dishes, it would be a 5 star. For those liking this type dish, try “Five Bean Casserole” from this site, and omit the bacon if a strict vegan. Plan on a longer cooking time than 2 hrs. If making for first time, read some of the 5 star reviews as so many of them ‘tweak’ this recipe (got a chuckle reading some of these tweaks as it morphs into a new recipe). . . and the low star ratings seem not to tweak it. I agree with so many others that this is a good starting point for creating something else.

Easy Mint Chocolate Chip Ice Cream

Reviewed: Dec. 26, 2011
Compared this recipe to Ben & Jerry’s Homemade Ice Cream & Dessert Book, and modified this recipe as follows: (i) 2 cups fat free half & half for the 2% milk, (ii) added 2 large eggs, (iii) increased peppermint extract to 2-1/4 teaspoons, (iv) omitted salt, and (v) used 3/4 cup shavings from Ghirardelli semi-sweet chocolate bar PLUS 1 cup coarsely chopped Oreo mint cookies. Opted for 5 drops green food coloring. Added the crushed Oreos during last 2 minutes of churning. Truly decadent and delicious!

Cha Cha's White Chicken Chili

Reviewed: Dec. 21, 2011
Contrary to so many rave reviews, we found this mediocre as written. Nothing stood out to make this any more than white beans and chicken combined together. Having said that, it was something we would make again after adding Sweet Baby Ray’s Honey Barbeque Sauce, and using this dish as a topping for baked potatoes.

Easy Frozen Margaritas

Simple ingredients, easy to make, and produces a great tasting margarita. A high power blender makes the blending task so much faster and the drink super smooth.

Margarita Grilled Shrimp

Reviewed: Dec. 21, 2011
You don’t tug on Superman’s cape. . . and don’t mess around with this recipe! Had these w/ “Easy Frozen Margaritas” from this site. Maybe it was the alcohol that made these taste so good but who cares. Simply great as written!! Suggest using wild shrimp as they’re more flavorful than farm raised.

Five Bean Casserole

Very tasty, and a healthy dish. Substituted 1 lb. garlic herb & sun dried tomato chicken sausage for the bacon, and made this as the main course for dinner.

Debdoozie's Blue Ribbon Chili

Reviewed: Nov. 6, 2011
A thick and superb chili. Simple and easy to make is an added bonus. Per DEBZDOO’s review, I substituted Pace Picante Sauce, Hot for the salsa and used a 1.75 oz. packet of French’s Chili-O Original Seasoning Mix (almost 5 tablespoons) as I could not find Williams Original. I substituted minced garlic for the garlic salt to lower the hefty 55% daily value of sodium for 1 serving – other ingredients add a sufficient amount of salt. This chili recipe is among the top rated and most saved, and that nearly says it all. We’ll be making this over and over again, and many thanks to Deb for sharing her prize winning recipe.

Smokin' Scovilles Turkey Chili

Reviewed: Nov. 6, 2011
Hot and sassy but depth of flavor lacking. For all the ingredients, I was expecting a bit more flavor. We prefer a thicker chili than found with this one. I would make this again if craving something spicy hot. Thanks JIMBOLYA!

Peanut Butter Noodles

Reviewed: Oct. 23, 2011
I imagined the combination of ingredients making a better dish than what turned out. The peanut sauce gummed-up on the noodles 10 or so minutes after combining. The peanut sauce makes or breaks this recipe, and I’ve had better over the years. I like Amy’s concept but it’s back to the drawing boards in search of a peanut sauce more suited to my taste.

Sangria! Sangria!

Reviewed: Oct. 17, 2011
Added 2 cups diet ginger ale in lieu of optional carbonated water; added 4 cinnamon sticks. These changes made it 5*. Tried it without the ginger ale, and it was too tart for my taste.

Key Lime Pie VII

Reviewed: Oct. 16, 2011
THE BEST!! Not to tart, and not to sweet. Made for a small gathering of mostly native So. Floridians who have eaten numerous key lime pies over the years. Everyone said this was the best key lime pie they have had, and demanded the recipe. Also used Graham Cracker Crust I and Whipped Cream recipes from this site to make the pie. From reading reviews, some folks don’t seem to know that key limes are quite small (rough size of a quarter) and more tart than the common Persian lime (more pie photos show Persian rather than key limes). Key limes are a/k/a Bartender’s limes; a liquor store may have them if not found at your grocery store. For a bit of trivia, the key lime was predominate in the US until the 1926 hurricane wiped out the Florida Keys and its lime crops. If fresh key limes are not available, the suggestion by others to use Nellie & Joe's Famous Key West Lime Juice is a good one if wanting to make an authentic key lime pie (sold by Whole Foods in S. Florida). My 1 lb. bag ($3.99) had 21 key limes, and made 5/8 cup of juice. A second bag was used to get a full 3/4 cup, and to cut slices for garnish w/ remainder to be used in other dishes. I baked my pie for 11 minutes per suggestion of other reviewers (tiny bubbles were barely detectable when they do appear), and I let it rest for 24 hrs. before serving. Thanks a bunch to Ann Richardson for sharing this wonderful recipe!

Spinach and Mushroom Frittata

Reviewed: Sep. 30, 2011
Subbed fresh baby spinach for frozen; added 2 chopped jalapeno peppers and fresh basil. Mixed 4 eggs, ricotta cheese, and Parmesan cheese in a separate bowl. With the veggies and seasonings in a large bowl, stirred in the egg mixture. Everything poured into a 9" x 13" baking dish. Super easy and fast, and very tasty . . . no leftovers which speaks for itself.

Sixteen Bean Sour Cream Soup

Reviewed: Sep. 28, 2011
Okay but not a chest pounding soup. Used Bob’s Red Mill 13 Bean Soup Mix since it was on hand - - didn’t think losing 3 beans was a deal breaker since one bean was lost between the title and ingredient list.

Hummus Casserole

Reviewed: Sep. 25, 2011
Distinctively different, and will make again. This review based on optional ingredients being included. While we enjoyed eating it as instructed, we liked it even better when briefly heated-up before serving. The amount of pita bread seemed a bit overpowering (a bit to dry) but was fine when served warm. The hummus spread will make or break this recipe. I don’t think this recipe will come out w/ a higher rating that what you assign to your hummus spread if tasted alone as torn pita bread and pine nuts won’t pull-up the rating. I choose “Smokey Chipotle Hummus” from this site, and it was great when coupled w/ this recipe. Had a store bought hummus been used, this probably would have been rated a 2 or 3. Thanks IMANKAY for a versatile recipe that can be changed-up by using different hummus spreads.

Smoky Chipotle Hummus

Reviewed: Sep. 25, 2011
Super good! While we’re not hummus connoisseurs, this one is far better than those we’ve had before. Much better than store bought versions sold at WF. A minor point of confusion was with “6 oil-packed sun dried tomatoes”; not sure how to interpret a quantity of 6 as store bought not packaged this way. Deviated by going w/ California Sun-Dry Fat Free Smoked Sun Dried Tomatoes (used 3/4 of 3 oz. pack), and this worked out well. Thanks SAVVYHOSTESS for sharing & we’ll be making this again.
