Black Beans and Pork Chops

Excellent! The flavor of the beans and rice was great. Extremely easy to make. Next time I will double the ingredients so we can have leftovers.

Chef John's Baked Eggplant Sandwiches

EXCLLENT! I used buffalo mozzarella in place of provolone, personal preference only. Placed fresh basil between layers. These are delicious warm or at room temperature. I couldn't tell you how they would taste as leftovers - because there weren't any! Only change I would make next time is one less slice of salami in each sandwich to cut down on the salt level. I cut these in quarters and used them as an appetizer.

Easy, Speedy Corn Muffins

Made as mini-muffins for a child's birthday to go with chicken chili. Made one batch with the sugar and one without - no noticeable difference in flavor so next time I will leave out the sugar. The recipe made 36 mini-muffins. I baked the muffins @ 400 degrees for 11 minutes. Everyone loved these moist corn muffins.

Candied Kielbasa

I've made these both in the crock pot & the oven. The oven method makes a crunchier coating. However, both ways were enjoyed by all. Nothing left, both times.

Caramelized Baked Chicken

I made the sauce on the stovetop, heating until the sauce thickened. Poured the sauce over boneless chicken breasts and baked them. Very good sauce that will probably work with pork just as well.

Sour Cream Pork Chops

Excellent. Changed sauce to 1 2/3 C unsalted beef broth & 1/3 C sherry with 1/2 can of low sodium cream of mushroom soup. After the chops were cooked, I put the sauce in a pan on the stove top, added the sour cream/flour mixture. Once that mixture had thickened I added a small package of sliced mushrooms I had previously sauteed in a small amount of butter. I served the chops & sauce with egg noodles and green beans almondine. Everyone loved these! No leftovers.

Spinach and Orzo Salad

EXCELLENT. Adults & children loved this recipe. Changes I made were: 1.) Chopped the spinach in the food processor - this makes it very fine (probably why the children had no problem eating spinach). 2.) Used sunflower seeds in place of pine nuts. 3.) Used approx. 1/3C of fresh basil. 4.) Added 1 small container of cherry tomatoes cut in half. 5.) Used feta with tomatoe and basil. I combined all ingredients except the tomatoes & dressing ahead of time & just prior to serving, added the dressing & tomatoes.

Chinese Broccoli Slaw

I made two changes to the original recipe. 1.) Used 3T of Splenda in place of the sugar. 2.) Used only one packet of the noodle seasoning. I made this ahead of time & kept the slaw/green onions in one container, the noodles/almonds/sesame seeds in another contaner & the dressing separate. About one hour before dinner, I tossed the slaw/green onions with the dressing & did not add the noodle combination until just before serving. Everything stayed nice & crispy!

Chicken Scampi II

Excellent. I used chicken tenders, browned them ahead of time with chopped garlic. I made 1.5 times the amount of sauce,just to make sure I had enough, and it worked perfectly.I added a red pepper and a splash of white wine before adding the chicken - each tender cut into 3 pieces - back to the sauce. This one makes it to my recipe box!

Double Chocolate Brownie Cake

Very chocolatey & good. Glazed with Satiny Chocolate Glaze on top and skim coated sides with the glaze. Then added almond slivers on top of the cake. Looked like a professionally made cake.

Creamy Sweet Potato With Ginger Soup

It was okay. Made just as written,but it was missing something! Flavor was rather bland. Consistency was great - just missing something in the spice area.Offered 2 garnishes, the chopped honey roasted peanuts & ginger snap ccokies run through food processor to make crumbs. More people preferred the cookie crumbs.

Butternut Squash with Onions and Pecans

This was excellent.It did take more than 15 minutes to cook the squash, but I was making it ahead of time anyway so it didn't matter. I used about 1/2 cup of chopped pecans and 2 tablespoons of chopped fresh parsley and the flavor was great.Nice to have a dish that can be made ahead of time! It tasted just as good (possibly a little bit better) the following day as a leftover.

Wine Soaked Mushrooms

Excellent. I doubled the recipe for 8 people and used 2 cups of wine and 2 cups of beef broth. Served as a side with prime rib. These were delicious the following day as a toppeing for leftover prime ribe sandwiches. Well worth the time & wine involved.

Butter Brickle Frozen Delight

EXTREMELY SWEET!! As prior entries indicated,this dessert is very rich,which you can control by serving small slices.However, even a small slice was very, very sweet & I only used about 4 ounces of the caramel sauce. If I make it again, I will use less condensed milk & cut all sugar levels. Very pretty presentation.

London Broil

Great marinade for tenderizing a tough cut of meat - and I skipped the MSG! Only other change I made was using fresh squeezed lime juice instead of lemon. A little time consuming because you have to turn the meat every half hour,next time I might try marinating overnight. Nice flavor!

Overnight Apple Cinnamon French Toast

Made this recipe for Christmas morning and it was a big hit. Everyone enjoyed it then and also in the following couple of days - very good reheated. Both children and adults enjoyed it. Really press the bread down into the apple pie filling, making sure that everything is nice and tight. This makes it much easier come serving time.

Brownie Caramel Cheesecake

EXCELLENT! I took the advice of other reviewers & made a couple of changes: Used Betty Crocker 10.25 oz brownie mix-prepared as directed on pkg & baked for 10 min.Used 1/3 less fat cream cheese & increased ingredients to 3 cream cheese, 3/4C sugar,1 1/2 t. vanilla & 3 eggs. Reserved 2/3 C of caramel mixture for top of cake. Baked cheesecake in a bath (SEE CHEESECAKE TIPS)for 50 minutes. Family & friends of all ages really enjoyed it! Thank you for the recipe.
