Deep Fried Spinach
I made this, but with coconut oil. Very nice, and you should taste before adding salt. I think it actually tasted better without the salt, and I put salt on everything. I always use baby spinach.

Mafioso Chocolate Cake
This was wonderful! Made as written, except I made a layer cake and put the chocolate ganache recipe from this site between the layers. I think I may have wasted a step (even though it was very good!) because this icing recipe is remarkable. And like other reviewers, would like to say that the icing stays very nice and doesn't harden. I used the exact measurements and ingredients listed. Baked in two 8" pans for 40 minutes. I think my oven runs a little cold, so you should probably check for doneness at 35 minutes if making a layer cake.

Easy OREO Truffles
These are great. AND I think I have found the perfect way to dip the chocolate! First, my double-boiler has a rounded bottom, which helps a lot. I used my wire, long-handled egg separator to remove the balls from the chocolate and with a few taps and a little side-to-side action I was able to dip them quickly and with hardly any waste. In fact, I probably had enough chocolate left over to easily dip another two dozen.
