Authentic French Meringues

Well, I didn't get 36 out of this but i also didn't use a piping bag so it's all good. Anyway, I signed up specifically to say that these are really good and really easy. I used my kitchen aide and the whipping time took about 15 minutes. My boyfriend who doesn't like sweets just hid some behind his back before telling me he's had about 5 since I started cooking (2 hours ago). They took me about 1.5 hours to cook. I'm going to make some more last minute for passover! Oh, Also, after everything was completely done, before spooning onto the cookie sheet, i added a tsp of pure vanilla (none of the imitation stuff, but liquid vanilla extract). Excellent.

Chocolate Covered Cherry Cookies II

The dough tastes great (they're in the oven right now). There is WAY too much sauce. Cut it down to 25% (1/8 cup of condensed milk and 1/4 cup of chocolate chips).

Ghirardelli Chocolate Mousse

This was a great, and very easy, recipe. Use the whole egg... I don't know why people insist on changing recipes before they try them. I only had semi-sweet bakers chocolate which ended up being a little sweet (but my husband and I are on the paleo diet so most things are sweet to us). I suspect that if I used the suggested bittersweet chocolate, it would have been perfect. -- semi sweet chocolate was excellent as well, I just might cut back on the sugar if I use semi-sweet again. *** NOTE: Mine came out runny so I poured it into individual serving dishes and let them set up over night (I think 2 hours would have worked though). Once I got to it, it was the consistency of serious mousse and I am confident that I could pipe it at that point to make it look like the posted picture. It needs to set first!

Passover Chocolate Torte

Although the crumblies that came off the top taste good, it fell apart after trying to get it out of the pan. Once i finally did get it out it was so moist that i could actually take a knife and spread the cake over the cracks to fix it. Hoping to get the pretty top it origionally had (which is now on the bottom after flipping it out) I stuck it on a cookie sheet and put it in the oven for 20 more minutes. It seems to have sortof worked. I'm bringing it to my family tomorrow, hope it tastes as good as people say it is!

Passover Apple Cake

Although this is pretty good, i had a terrible time getting it out of the pan! The top half with most of the apples came out and the bottom half stuck despite the greasing i did before hand. I ended up redoing it in teflon cupcake molds so i could just flip them out. That didn't quite work either so i took a spoon and scooped them into parfait glasses and tea cups. It's cute but looks obviously messed up. I plan on bringing them to passover, sticking them in the microwave for a minute and serving with ice cream and caramel to hide the messiness.

Flourless Chocolate Cake I

This cake is SO EASY! I've made three of them in the span of one week. I brought one to Passover and two to my husband's pHd defense. The professors LOVED it (including one with celiacs) and everyone wanted the recipe. Don't change a thing. I do have to mention that when I can't find bittersweet chocolate, I use semi-sweet and cut down the sugar a bit. I did the first one with semi-sweet without altering the sugar and it was still great, but some of the adults were a little overwhelmed by the sweetness.

Lemon Cupcake with Blackberry Buttercream

I ended up with a lot of extra frosting but it was so good people ate it straight. Don't change a thing. One thing to note: I made this a second time, halving the icing recipe and I used natural/organic butter (Kerigold)... I needed to add more than necessary to get it to whip up properly. Tasted great though, it just needed 2-3 extra tablespoons of butter. When I made it with normal (land o' lakes) I didn't need to change anything.

Roasted and Curried Butternut Squash Soup

I used 1 cup of coconut cream (the solid part when coconut milk separates in the can) instead of milk. I used veggie broth too (my aunt is a sikh so she's vegetarian). We all loved it.

PJ's Sweet Potato Mash

I love these potatos. I made them last thanksgiving and everyone loved them (I omitted the sugar all together). The next day, I took the leftovers (I made a double batch for 6 people ... we're talking not a lot of leftovers), I added about 3 carrots and half a squash (boiled and roasted respectively) and it tasted the same but we had enough to go around the next day. Excellent share. thanks PJ!
