Cheddar Bacon Hamburgers

This was awful, very tough and nasty tasting. I did not have the horseradish and substituted worstershire sauce. Plain hamberger is better than this.

Chicken Tortilla Soup IV

This is a favorite of mine...quick, easy and very tasty. I usually add a can of lima beans to make it a bit healthier and leave out the tortilla chips to reduce the calories. If you like it spicy just use medium or hot salsa.

Yummy Sweet Potato Casserole

I make a very similar recipe using maple syrup (the good stuff) in place of the white sugar and lemon juice instead of vanilla. Leave out the milk. Leave the flour out of the topping too. This is the very best sweet potato dish I have ever had. All the family loves it at the holidays.

Quick and Easy Mexican Chicken

This is truly quick, easy and very good. I used thick sliced pepper jack cheese instead of the shredded cheddar and it worked out very well. I served it with spanish rice and sliced avacado. I use a similar recipe to make chicken parmesan. Use maranara sauce in place of the salsa and mozzarella cheese for the cheddar and top with parmesan. Also quick, easy and very tasty. It is great with pasta.

Orange Vinaigrette Brown Rice Salad

I used white and wild rice (what I had in the pantry) and cooked it with a little butter and salt. I left out the spinach, orange and onion. Instead I used dried cranberries, apricots and golden rasins. For the dressing I doubled the orange juice and omitted the honey. This makes a wonderful salad to serve with cold chicken.

Snickerdoodles I

This recipe is pretty good as it was written. It is easy to put together but sticks to the cookie sheet like glue. I had a major mess with my first two sheets, even after using cooking spray. But had much better luck using parchment paper. I also had to cook these much longer that the 8-10 minutes stated, mine took about 13-14 minutes to cook. Next batch I will add a little vanilla and will put the cinnamon in the dough and then just roll them in sugar. Late addition, I did make it adding 1 tsp vanilla and 1 tsp cinnamon to the batter and then just rolling them in sugar. Turned out perfect. My husband's all time favorite cookie.
