Baked Zucchini Squares

I sliced the zucchini very thin and it equalled a generous 4 cups. I used grated roman0 instead of the parmesan and dry parsley instead of fresh because that's what I had. Based on a suggestion from a reviewer I added a crumb topping made with a sleeve of ritz crackers and about a quarter cup butter. It came out great, however next time I will only use half the cracker topping. I will also try grating the zucchini as suggested by a reviewer for a change.

Awesome and Easy Creamy Corn Casserole

This was great! So quick and easy. I followed the recipe ingredients exactly. I did bake this in a 9x13 glass dish because I wanted it to bake a little quicker. I think I still left it in about 40 minutes. I think I will always put it in that size pan because it gives more of the golden brown topping. My Hubby is not a corn bread fan, but he loved this. Next time I will add a little black pepper and I might experiment with some green chili's. I know I'll be using this as a potluck dish!

Kentucky Butter Cake

This cake is very plain and has a somewhat course texture. It is great for this type of cake. I sprayed Bak-Klene on my bundt pan and the cake fell right out after cooling for sometime. The color was even and golden brown. I sliced the cake and layed it on a platter to take to a meeting. It was gone quickly. I think this cake would work well for strawberry shortcake. It might be good even without the sauce. The sauce only soaked into about a third of the cake. But, the cake has great flavor and texture. Definitely one I'll try again.

Pea Salad I

This is a great buffet salad. I did add chopped celery and green onions as an additional layer. I used less sugar in the dressing and added salt and pepper. I used a lasagna casserole and it was a great presentation.

Garden Fresh Tomato Soup

This soup is absolutely delicious! Although, I must admit I made several changes - mostly based on previous reviews! I've made this several times and always double the recipe. I saute lots of chopped garlic in olive oil and then add the chopped onions (2 large) and saute until tender. I add chopped tomatoes (with skin and seeds) and bring to a boil. I then add the chicken stock and cook for about 20 minutes. I cool slightly and add fresh chopped basil (about 3 TBSP). I puree with a submergible blender (you can use a regular blender) and then add the roux as described in the recipe. I only add a half tsp sugar. In addition to the salt I add pepper to taste. I add 2 TBSP balsamic vinegar and about an 1/8 tsp cayenne pepper. I add 1 cup heavy cream. I've only made this soup with home grown tomatoes. Now that the season is over I'm going to try it with store bought or even canned tomatoes. This soup is very sophisticated and I think would be great for a dinner party. It was so good my Hubby wouldn't let me share it!! I'm already looking forward to next years tomato crop - I'll never have too many now!!

Cream Cheese Pound Cake I

This cake is really delicious. I did omit the almond extract and added a little extra vanilla. I used this for strawberry shortcake and it was perfect. The texture was so fine and it cut beautifully. This is definitely a keeper and it's hard to believe I could find a better pound cake.

Triple Berry Crisp

This is GREAT!! I converted the recipe to 12 servings and used an 8" square glass pan. It provided plenty of topping for a nice bottom and top layer. I did add about one cup of extra fruit. I used mostly blue berries with one large peeled peach and several sliced strawberries. I baked it for about 40 minutes. This dessert got rave reviews. One of our guest said it was the best dessert he'd ever had. I served it with vanilla ice cream. Thanks Polly for posting this jewel!

Bar Cookies from Cake Mix

These are great! They're so quick and simple to make. I make some cakes using a mix, but this was the first time I used it for the bars. Based on previous reviews I did add the extra 2 TBSP water. I also added 1 tsp vanilla because I like vanilla!! Otherwise, I followed the recipe exactly. Next time I might try a chocolate cake mix. I think this recipe has potential for change! Thanks Penny for posting this recipe -it's fun to try a recipe that is unique and so easy!

Autumn Cheesecake

I brought desert to a dinner and this cheesecake was a big hit. Definitely a keeper! I followed the tips summarized about 7 reviews back by "noelc." I put the water in a shallow pan on the rack below the baking cheesecake. Next time I might try using 1 1/2 times the filling recipe rather than doubling. Although it did look very impressive. I just think the topping might be more appreciated if the filling weren't so thick. Thanks Stephanie for sharing this great recipe!!

Basic Cream Cheese Frosting

This frosting is great! I halved the recipe and added a half cup chopped pecans. It generously frosted a bundt cake (Grandma Bertha's Banana Cake - Allrecipes). The cake is not too sweet and this made it really delicious. I'll keep this frosting recipe as I'm sure it'll work well on many different type cakes. Thanks for sharing JJ.

Gramma Bertha's Banana Cake

This cake was delicious.. Not too sweet and yet moist and tasty. I followed directions exactly. It did not rise far up my 10 inch bundt pan so next time I'll use one of my smaller, different design bundt pans. I frosted this using a half recipe of "Cream Cheese Frosting II" (Allrecipes) and added a half cup of chopped pecans to the frosting - a real treat!! Thanks for posting Lisa - this is a keeper!

Texas Sheet Cake I

WOW, this cake is great!! It's so quick and easy to make and ooooohhhh so good. I've made it 3 times in the last week to take to various functions. There's never a scrap left over for me to bring home. I like the idea you can cut it into squares and lay it out on a platter - very simple. I followed the recipe exactly. The one thing I've had to do everytime is thin out the frosting with a tiny bit of milk. I found this made spreading very easy. Thanks Chantal for posting this super recipe.

Glazed Meatloaf I

This is an excellent meatloaf. I used one pound ground beef and one pound ground turkey. Next time I'll follow the recipe and use all beef. I think the texture was a bit soft with the turkey. The only other change I made was that I added a generous amount of finely chopped garlic which I'll continue to do. Also, I did double the amount of glaze. Persimmon Bread I

This bread is moist and delicious! I followed the recipe exactly with the exception of the spices. I added 1/2 tsp nutmeg and a dash of cloves. Also, it was beautiful and brown after 50 mins of baking. I did use a dark, nonstick loaf pan. My oven temperature is usally quite accurate. It was the first time I've used persimmons in baking. My neighbor shared some from her garden. Now I'm anxious to get more so I can make more of this delicious bread. I read that you can freeze persimmon pulp so I'd like to do that and be able to make this even when they're not in season. Thank you v monte for this wonderful recipe!!

Cream of Asparagus Soup I

I've made this soup several times and it is wonderful! The only changes I made is using 3T of the boouillon powder instead of 4. Also, I add lots of chopped garlic when browing onions. I'll be anxiously awaiting the height of next years asparagus crop so I can make lots more of this great soup!! Thanks William for sharing!!

Fig Cake I

This is delicious!! It is very moist and full of flavor. I think when the figs are gone I'll try this with another fruit, maybe apples. I was a bit concerned when I made the frosting, but, once on the cake and after setting awhile it was great.. Thanks for sharing this recipe, Liz!!

Upside Down Pumpkin Cake

I just took this cake to an organization potluck - Wow, did I get the compliments, i.e., awesome, scrumptious, delicious, etc.. Of course, I got recipe requests which I was prepared for with extra copies I'd printed after taking a small taste. I brought fresh whipped cream as a topper. I baked this in a glass 9x13 - I mention this because I didn't hear the timer go off and got side tracked. It ended up baking for 1 hr 40 mins.. The pecans were a bit over brown and the contents were firm. But, it didn't seem to "damage" it at all. The only change I made to the recipe was that I added a 1/2 tsp ground ginger. It's going to be hard to top this for future meetings! Thanks Jacki for sharing this great recipe!!

Banana Cake VI

This cake is deeelicious!! Definitely a keeper. I do think there is something wrong with the temp. After 1 hour at 275 it was still uncooked. I turned the oven up to 300 & cooked another 20 mins or so. Next time I think I'll try 325 and watch closely. I skipped the freezer and can't believe that would make it any more moist or delicious!! The frosting is yummy, but, I didn't use it all on the cake. I have enough left for a light frosting on another cake. Cindy, thanks for sharing your great recipe!!..

Baked Potato Soup I

This is GREAT!! I made it exactly by the recipe. I did use only 3 potatoes because mine were so huge. Next time I'd dice the potatoes a bit smaller. I did add an extra 1/2 tsp salt. Definitely a keeper. Thanks for sharing.
