Red Enchilada Sauce

I used this recipe as a guide to make enchilada sauce for my kids. When I make enchiladas for myself or guests, I only use NM red chile puree that I make on my own (chile pods I sun dry myself), and never just some random chile powder. I rarely cook with chile powder, unless I'm making chili dogs or frito pie, so I had no idea how much to use. This sauce recipe will be extremely thin/runny if you don't start off with a little flour browned in oil. I also used canola oil instead of olive oil. Since I wasn't making spaghetti sauce, I left out the basil, parsley, and oregano. If I wanted to use oregano in this recipe, I would use only Mexican oregano. I also left out the onions (my kids don't like them) and the salsa. I used a pretty good quality chile powder, so it was able to stand on its own pretty well when using my own enchilada sauce making techniques. I basically only needed the recipe to help me figure out how to make a sauce that wasn't too spicy for my kids. I never thought of adding tomato sauce, so that was an idea I thought may work. Armed with the tomato sauce info and chile powder measurements, I was able to make a sauce that my kids could eat. Even though I didn't follow the recipes exactly, I learned that adding tomato sauce cuts down on the spicy factor. Thanks for sharing your recipe.

Egg Salad I

This egg salad was really tasty. I wasn't planning on making it, so I was lacking a few ingredients. I used yellow mustard instead of dijon, and I had to leave out the onions so the kids would eat it. I also added a little garlic powder and left out the paprika. The kids loved it! My kids are really picky, so I was happy to be able to add something new to our lunch menu. Thanks for the great recipe!

Cheesy Potatoes

I followed the recipe exactly and made no changes. This recipe is really easy and fast to whip up when the kids are hungry for something cheesy. My picky kids loved this recipe, and so did I. I loved the ease of the dish most of all. Thanks for sharing.

Whole Wheat Banana Nut Bread

I made a few additions to this recipe, but nothing totally mind blowing. I added a little cinnamon, nutmeg, and brown sugar. This bread is amazing, and the whole wheat haters I know couldn't even tell it was there. Another great recipe from allrecipes, I love this place! Thanks for sharing.

Pumpkin Bread IV

I followed the recipe exactly, and the bread was almost perfect. The only complaint I have is the bread was too sweet, and I think it was just me because the others who tried it disagreed. I will make this recipe again, but cut down a tad bit on the sugar. Thanks for sharing this recipe.

Whole Wheat Blueberry Pancakes

This recipe is perfect and is the only one we use now. Instead of artificial sweetener, we use honey, and sometimes we leave out the blueberries depending on what the kids are in the mood for. I have no complaints and no suggestions for improvement. Great recipe! Thanks for sharing.

Three Cheese Garlic Scalloped Potatoes

I made this recipe on Christmas Eve, since I was in a real hurry, I didn't follow the recipe exactly. I used the exact ingredients the recipe called for, but I really just through it all together kind of haphazardly. And I minced the garlic instead of slicing. Everyone loved the potatoes, especially my mom and I. They were so creamy and smooth, YUM!!! I ran across some scalloped potatoes at another get together the next day, and they didn't come even slightly close to being as tasty as these! Thanks for sharing.

Fluffy Biscuits

These biscuits are super easy to make, so for that I would have given them 5 stars! I followed the recipe exactly, and they were good. Not super, but good. My kids loved them, so I will be making them again, but I will also continue to search for that perfect biscuit recipe. These biscuits were flakey, and they had a good consistency overall. We made egg, sausage, and cheese breakfast sandwiches out of them.

Baked Crumbled Chicken

This recipe was really tasty! I made it "as is" with no alterations. It made enough coating for 8 drumsticks. The only changes I will make is the baking time (my drumsticks were a little over cooked) and I will spritz them with a little oil instead of butter.

Jamie's Minestrone

I first made this soup a few years ago, I just forgot to rate it! This Minestrone is awesome! The only change I made was adding more broth because it was a little thick for our taste. It seems like a perfect recipe for a cold day, so I am making this again this week! Thanks for sharing this wonderful recipe!

Rita's Sweet Holiday Baked Ham

Easiest Peanut Butter Fudge

I followed the recipe exactly, and I when I went to beat the fudge until smooth, it turned into dry pebbles that would not mix together. Could it be that I live at a higher altitude? I added about 1 tablespoon of milk to my pebbles and they mixed up smooth. I put the fudge in a dish and chilled it. The end result was a soft fudge type dessert. I really did not care for this recipe, but I am sure it has something to do with the problems I had.

Delilah's Frosted Cut-Out Sugar Cookies

This recipe was extremely easy. I didn't change anything about the recipe, and I chilled the dough for about 3 hours.The dough was perfect; it rolled easily and never stuck to my rolling pin, or the very lightly floured counter top. The dough worked well with the cookie cutters. The icing was super easy to make, and very tasty. These cookies baked beautifully and tasted awesome! This is a keeper.

Lemon-Pepper Salmon

This recipe is amazing. I served it with brown rice instead of couscous. I used olive oil and no butter, but those are the only changes I made. The salmon was full of flavor. My mom doesn't like salmon, but she loved this dish! I highly recommend it!

Banana Bread I

I made a few changes to the recipe like the other reviews suggested. I added 1/2 tsp of baking powder, 1/2 tsp of cinnamon, 1/2 cup walnuts and used a mixture of 1/2 cup brown sugar and 1/2 cup of white sugar. Baked the loaves for 40min. YUMMY!! Thanks so much for an easy basic and tasty recipe.

Kabob Marinade

My husband loves this marinade! We made kabobs for guests and they all loved it too. The only things I changed were the oil, I used 1/4 cup and only used about 2 tbls of yellow mustard. We used top sirlion and marinated for about 14 hours in a vacuum sealed bag. It was a hit and we will be using this recipe often. Thanks for posting it :)
