Chef John's Ham and Potato Soup

I made this today for the first time ever (I've never made soup before besides from a can), and my hubby loved it. I know a meal is a hit when he keeps complimenting it for an hour or two after he's done eating. That happened today. I did not put any celery or milk in it because I didn't have either, but my hubby agreed celery would be a nice touch in it. The milk is not needed, though. I am only giving this four stars because this isn't a recipe that blew us over, but it is very good and will be added to my rotation of "now and then" foods.

Skillet Pork Chops with Potatoes and Onion

I made this in the Crock pot for my hubby today. It's probably my fault but he thought it was bland. However, I did not put any bouillon cubes, salt or lemon juice in it. He did like the potatoes and onions, but overall the dish was very bland. I'm not sure what I could have added for additional flavor. I definitely will not be making this dish again as is.

Classic Peanut Butter Cookies

I made this recipe for my hubby. I followed it to a 'T' mostly, but I cut all ingredients in half for a half recipe. I also omitted the salt (I never cook or bake with any salt). I had no problems of the cookies "melting". They came out looking delicious!

Black Beans and Pork Chops

I made this in the Crock-pot today for my hubby (I don't eat meat.) He really enjoyed this meal! I used basil leaves instead of cilantro because I didn't have cilantro. I looked up substitutes and basil leaves were listed. The ratio is 1:1. I also used a salsa that had black beans in it, but I still used a can of black beans as well. I layered frozen uncooked pork chops, basil leaves, salsa, black beans w/ liquid, and pepper. I cooked this on high for about an hour then turned it to low for about three more hours. I served it over a bed of brown rice. The next time I make this I may try adding taco seasoning to the pork chops as another reviewer commented.

Pineapple Banana Bread

I made this for my hubby today, first time ever. He LOVED it and gave it 5 stars!! Here's what I used: 3 cups all-purpose flour 1 cup loosely packed brown sugar 3/4 cup worth of Splenda (I think it was 12 packets) 1 teaspoon baking soda 1 heaping teaspoon cinnamon 3 eggs 1 1/4 cups olive oil 8 ounces peach slices, no liquid added (I didn't have pineapple) 3 ripe bananas 3/4 cup chopped walnuts I *never* use salt and nobody even knows. I also baked in a 325 degree oven for about 55 minutes. This made a bread loaf and an 8x8" square loaf. DEE-LICIOUS!!!
