Lentils and Rice with Fried Onions (Mujadarrah)

I loved this dish, and my husband, who is not a big fan of lentils, thoroughly enjoyed it. I followed others' suggestions, using chicken broth to cook the lentils and rice, and added a bit more salt. In addition, I added 4 sliced garlic cloves to the cooking lentils and rice, along with a teaspoon of cumin. Very tasty!

Apple Pan Chicken

I used only 1/2 jalapeno, concerned it might be too spicy for my mother in law, and she loved it, as did my husband and guests. Clean, warm taste, not "hot". Next time, I will add an additional clove garlic, as we like garlic, in this household.

Candied Carrots

Loved this dish with turkey, stuffed with limes and jalapeno peppers, last night! Was looking for a dish my mother-in-law, who doesn't like carrots, would enjoy, and one that would compliment a Mexican themed Canadian Thanksgiving supper. She loved them! After reading some other helpful reviews, I substituted cinnamon for the black pepper, and heated on low for 2 minutes after adding brown sugar, to thicken up the sauce. I will be making this again, tonight, for family who missed our turkey supper last night.

Carrots in Dill Butter

This is also delicious with grilled steaks. I use dill seed or weed in both rubs and marinades for beef, as it adds sweetness, without being sweet.This dish is easy and lovely, especially if you enjoy dill pickles or other dilled vegetables. This is in my permanent list of recipes!

Pan Sauce Chicken

A real family favorite, in my household. A did not have seasoning salt, as we are trying to cut down on sodium intake, so I added 1/2 teaspoon Mrs. Dash, with dashes of garlic and onion powder. It was delicious!

Chicken Breasts with Balsamic Vinegar and Garlic

We love this recipe, and my husband has asked me to make it for a dinner party. I made this recipe with the following changes: I marinated the chicken breasts in the balsamic vinegar in a plastic bag for 30 minutes. I started the sauce ingredients in a small saucepan ten minutes before the marinating time was up. I accidentally added 1/2 teaspoon thyme, but we love thyme with chicken, and I plan to make this exactly that way, next time. I used the George Foreman grill, grilling the mushrooms first for three minutes, then grilling the chicken breasts for 4 minutes. I added the mushrooms 7 minutes before the sauce and chicken was done. Other than that, I used all the listed ingredients, and it was delicious. I served this with white and wild rice and green beans. My mother in law, who takes a lot of coaxing to get enough protien dishes, loved this!

Mashed Potato, Rutabaga, And Parsnip Casserole With Caramelized Onions

I served this with a thyme and rosemary seasoned pork roast last night. I scaled it to four servings, as we are a small family. Otherwise, I followed the recipe exactly. My husband, who always said he "hates" rutabagas and parsnips, loved this recipe. He went back for thirds! My mother-in-law also loved this, and I will definitely make this again. Peeling all the vegetables was worth the effort.

Split Pea Soup Atu

I have served this twice, and my family loves this soup. The only change I made is that I serve a shot glass of sherry with each serving, for each person to stir into their bowl as they like. I had pea soup served this way in Big Sur, years ago, and family likes it this way.

HERB-OX® Bouillon Pork Chops with Burgundy Mushroom Sauce

This was GREAT! I did not have fresh mushrooms, (small town, the store was all out) so used 14 oz. of canned mushrooms. I poured the wine over the drained mushrooms to marinate about a ahlf hour before cooking. I added a bit more wine to the sauce while cooking. I also had to use a grainy mustard, rather than Dijon, but added a sweet onion mustard, to make it more like Dijon mustard. I will definitely be making this easy, delicious recipe again.

Sage Roasted Pork Tenderloin and Beans

This was delicious! I did not have sage (unforgiveable, but I live in a small town!) so I used an Italian herb blend and added one half teaspoon additional rosemary. Otherwise, I followed the recipe exactly. It was wonderful! My mother-in-law's reaction is my benchmark, as she is very fussy about meals. She also loved this. She pointed out that this could easily use any plain, canned beans. Good to know. I definitely plan to make this, again. It was easy to fix after work, nutritious, and my family loved it; what more could you want?

Strawberry Spinach Salad II

Great recipe, but I did not use the sugar, and I mixed half balsamic vinegar, half raspberry vinegar. I simply forgot the sugar, but it was not missed. I liked this so much, and we still have strawberries and spinach left over, so I will be trying it, again, tonight, with half the sugar called for added in.

Shepherd's Pie II

This was great comfort food! I needed a recipe o utilize leftovers, and I wanted something different from my mother-in-law's shepherd's pie. I scaled the recipe to 4 servings, but kept the herb and spice amounts the same, and the potatoes. I added a pinch of sugar and salt, to carmelize the onions. I added a bit of leftover ribeye steak after browning the ground beef, and as some other reviewer suggested, chili powder, about a half teaspoon. This is definitely in my list of recipes for the future.

Oven Fried Chicken IV

This was delicious, and the single piece leftover was great for lunch, cold, the next day. I added onion powder and paprika, a tablespoon each. Spraying the cooling rack with non-stick cooking spray first alleviated any sticking concerns. Using the cooling rack is a must. It was not as crisp as I expected, so next time I make this, I will up the oven to 375 for the last few minutes.

Rice Noodles with Shiitakes, Choy, and Chiles

We loved this!. I cooked the rice noodles first, with a drop or two of sesame oil, then added only about 1/3 to the wok. The rest I set aside for placing the vegetable mixture atop. I used fresh chiles and reconstituted, dried shitakes, but followed the time and cooking instructions, otherwise. I have already alerted our produce manager that I will be ordering the chile peppers frequently, as I plan on making this often.

Seared Scallops with Tropical Salsa

This was fabulous! I used the smaller scallops, as that was all that was available; otherwise, I followed the recipe exactly. I will definitely be making this one again! As other reviewers noted, this salsa would be great on many other meat or fish.

Barbeque Chicken

Wonderful! I have the feeling using fresh lemon juice is key...I bought lemons strictly for this recipe, although I had bottled lemon juice. It was perfect, and the marinade smelled great! Served it with a Greek salad and an eggless potato salad. Heated the marinade next to the chicken, for safety. Made a great basting sauce... Thanks, Ann, for a real keeper.

Love this recipe! Its great for one of those days that's a bit chilly, and you have an extra pair of hands to help with the prep work. I used the ham (leftovers) and cheese option, with sauerkraut. Its on my personal list for the future.
